This is a kitchen leadership role designed for an experienced line cook who is ready to take the next step toward becoming a Sous Chef. You'll step into a Sous Chef in training capacity, leading daily back-of-house (BOH) operations, mentoring junior kitchen staff, and keeping production running smoothly across a fast-paced, pre-opening hotel kitchen environment in one of Austin's most anticipated new luxury dining destinations.

What You'll Do

  • Serve as a Sous Chef in training at Yacht Club inside Hotel Trinity, Autograph Collection Austin — stepping into full kitchen management responsibilities and overseeing all BOH operations in the Sous Chef's absence at this pre-opening fine dining seafood restaurant
  • Mentor and collaborate with entry-level cooks, Line Cooks, culinary apprentices, and stewards while managing daily food preparation and production at this upscale downtown Austin hotel kitchen
  • Follow all White Lodging F&B procedures, health department regulations, and federal food safety guidelines across every shift at Yacht Club
  • Assist in maintaining food cost and labor cost standards to meet the financial targets of this high-profile Austin hotel restaurant
  • Check ingredient freshness; enforce all recipe standards, oyster bar specifications, and portion-use records consistently across the kitchen team
  • Monitor guest feedback scores and proactively influence food quality and service consistency — contributing to the reputation of Yacht Club as one of Austin's premier upscale seafood dining destinations
  • Foster a culture of cooperation, respect, and professional kitchen standards among all coworkers in this pre-opening hotel culinary team
  • Perform other duties as assigned

What You'll Bring

  • Solid working knowledge of all commercial kitchen equipment and culinary preparation techniques — required for this high-volume fine dining hotel kitchen role in Austin, TX
  • Demonstrated proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery — seafood cookery and oyster bar experience a strong plus for this role at Yacht Club
  • Experience leading or mentoring kitchen staff — prior lead cook, senior line cook, or chef de partie experience strongly preferred; this is a Sous Chef in training role with a clear culinary management career path

  • Active unexpired Food Handler's Certification — required
