Your Role in the Kitchen
As a Line Cook at Draft, you are responsible for preparing, cooking, and plating menu items across multiple stations while maintaining consistency, quality, and speed. You will follow recipes and portion standards, monitor food safety, and collaborate closely with kitchen leadership and teammates. Your work ensures every guest receives an exceptional dining experience while supporting efficient, high-volume operations.
What You'll Be Cooking Up
Culinary Execution and Food Quality
  • Prepare, cook, and plate menu items according to recipes, portioning, and presentation standards
  • Work across multiple stations as assigned, including grill, fryer, sauté, pantry, and prep
  • Ensure food is cooked evenly and to proper doneness by monitoring cooking times, temperatures, and visual cues
  • Season and prepare food using approved recipes, techniques, and professional judgment
  • Taste and test food throughout preparation to ensure quality, consistency, and accuracy
  • Maintain proper portioning and plating to support food cost controls and presentation standards
Ticket Management and Service Flow
  • Accurately read and interpret food tickets to ensure correct and timely order execution
  • Produce quality food efficiently to support fast-paced, high-volume service
  • Communicate clearly with kitchen leadership and teammates to maintain smooth operations
  • Assist front-of-house team members as needed to help expedite food and ensure timely delivery
  • Request assistance during peak periods and report any service challenges to the Sous Chef or Chef de Cuisine
Food Safety, Sanitation, and Cleanliness
  • Maintain a clean, sanitary, and organized workstation at all times
  • Follow all ServSafe guidelines, health department regulations, and company food safety standards
  • Properly store, label, rotate, and handle food products to prevent cross-contamination
  • Monitor and document food and equipment temperatures, adjusting appliances as necessary
  • Clean and sanitize tools, equipment, and surfaces throughout and at the end of each shift
Prep, Inventory, and Station Readiness
  • Weigh, measure, and mix ingredients accurately using proper kitchen tools and equipment
  • Complete assigned prep tasks to support service readiness for all meal periods
  • Maintain par lists, par levels, waste logs, and requisition forms according to management standards
  • Replenish service lines as needed and restock stations to prepare for the next shift
  • Ensure stations are properly broken down and checked out by a manager before leaving for the day
Teamwork and Professional Conduct
  • Work collaboratively with kitchen and front-of-house teams to support an efficient and respectful work environment
  • Follow direction from kitchen leadership while remaining adaptable to changing service needs
  • Maintain a professional attitude during high-pressure situations and peak service times
  • Report equipment issues, safety concerns, or incidents promptly to leadership
  • Perform additional duties as assigned and as trained to support overall restaurant operations

Pay rate is determined based on relevant experience and qualifications.
Physical Requirements:
  • Ability to stand and maintain well-paced mobility for up to four hours at a time.
  • Frequent bending, kneeling, stooping, reaching, and squatting to receive and store supplies and work on the line.
  • Ability to lift, carry, and move kitchen equipment and food products as required.
  • Ability to communicate clearly and listen attentively to supervisors, coworkers, vendors, and guests.

Skills/Qualifications:
  • Required: Food Handler's Card, or ability to obtain prior to start date.
  • 1-3 years minimum of cooking experience in a restaurant, hotel, or high-volume dining environment.
  • Strong understanding of cooking methods, kitchen equipment, and knife skills.
  • Ability to follow recipes, prep lists, and written or verbal instructions accurately.
  • Strong attention to detail with the ability to work quickly and efficiently.
  • Ability to remain calm, focused, and organized in a fast-paced environment.
  • Self-motivated, dependable, and committed to teamwork and consistency.

Testing/Work Authorization:
  • Must be at least 18 years of age or older.
  • Valid U.S. work authorization required.
  • Pre-Employment background check Required.

Expected Hours of Work:
Flexible availability is required, including nights, holidays, and peak seasons. Team members must maintain open availability for at least two of the three weekend days: Friday, Saturday, and Sunday.
