DIETARY MANAGER
Job Description:
The Dietary Manager provides management of the Dietary Department, ensuring the resident's nutritional needs are met. This may include, directing and assisting the preparation and serving of quality meals and therapeutic diets, in a safe manner; and providing documentation in the clinical record of the resident's nutritional status. The Dietary Manager reports to the Administrator.
Essential Job Duties:
  • Directs and supervises all dietary functions and personnel.
  • Hires, orients, trains, counsels, disciplines, and when appropriate, terminates dietary employees.
  • Ensure that all new employees receive food handlers training within 3 months of hire.
  • Plans and presents in-service education programs for the Dietary Department as needed.
  • Evaluates work performance and gives evaluations to dietary employees. Maintains the personnel records of the dietary employees.
  • Schedules work hours and assignments also reviews and checks staff work performance. Is responsible to see that each shift is properly staffed.
  • Investigates on-the-job injuries and corrects the problem and/or retrains the employee as necessary.
  • Develops cleaning schedules, and other dietary management tools.
  • Responsible for food purchase, production, and timely service of meals.
  • Assures that food and supplies are available for use by dietary personnel.
  • Purchases food products from vendors approved by Grace Living Centers.
  • Checks in and inventories incoming food and supplies.
  • Maintains cost records and works to meet budget guidelines.
  • Submits written reports to administration as necessary.
  • Maintains the standardized recipes in which the recipes are adjusted to the size of the facility.
  • Plans and assists in preparation and service of holiday and special meals and functions.
  • Checks trays for accuracy, Garnishments and over all appearance before they are delivered.
  • Updates dining room seating chart.
  • Ensure that tablecloths and cloth napkins are available.
  • Observes the food intake of residents. Communicates information to the Dietary Consultant and/or Director of Nursing.
  • Inspects storage areas on a weekly basis for proper temperatures, cleanliness, and order. Assists in cleaning procedures as needed.
  • Inspects Dietary Department on weekly bases by performing dietary QMT and report the score to the administrator and home office.
  • Visits residents to do initial nutritional assessment and screening, explain diet, record food preferences, and promote a quality food service. Visits all residents at least one time per quarter. Residents at nutritional risk are visited monthly and more often as needed.
  • Nutritional Notes are to be completed monthly for all residents at nutritional risk.
  • Coordinates dietary services with nursing service and activities director.
  • Works with Dietary Consultant to meet resident's nutritional needs.
  • Processes new diet orders and diet changes when received from nursing service, and keeps diet cards updated and checks against doctor's orders at least monthly.
  • Participates in interdisciplinary Care Plan meetings and updating by Dietary Manager.
  • Participates in department head meetings.
  • Is responsible for knowing, understanding, and conveying to other dietary staff personnel the Federal and State rules and regulations regarding nursing home dietary requirements and is responsible for their enforcement within the scope of the Dietary Department.
  • Enforces established rules and policies of the facility and Dietary Department.
  • Maintains the security of the Dietary Department.
  • Performs other tasks as necessary and appropriate.

Qualifications & Education:
• Must have certification by the Dietary Managers Association and a Certified Dietary Manager. If not certified then the employee must obtain "Serve Safe" certification within 3 months of hire and certification by the Dietary Managers Association within 3 years of employment.
• A Diet Technician, Registered (DTR) will also qualify for placement as a Dietary Manager with the job title of "Diet Technician".
• Ability to read, understand, and follow recipe directions, diet orders and work assignments in English.
• Must be in good mental and physical condition.
• Must possess leadership qualities and be able to supervise and secure the cooperation of the dietary personnel.
  • Must demonstrate a moderate level of computer literacy in order to use and access our systems and tools within our facilities to complete online tasks and documentation.

• Must be able to effectively communicate and interact professionally with staff and residents.
• Must have basic knowledge of dietetic principles, food sanitation, and food service operation.
• Must be able to work productively with other department heads and personnel, and the dietary consultants.
• Must enjoy working with geriatric residents.
• Must be able to lift, push and carry 40 pounds with 2 hands. Must be able to lift, push and carry 20 pounds with 1 hand.
