8340 Food & Nutrition Svcs-KHMCThe Culinary Specialist will be responsible for overseeing the culinary production operation of the kitchen for both retail and patient meals, ensuring the highest standards of food quality, presentation, and hygiene are met.

QUALIFICATIONS

License/Certification

Required: ServSafe Food Protection Manager Certification within six months of hire/transfer.

Preferred: In progress or acquired CDM, CFPP, Certified Dietary Manager, or Culinary Degree.

Experience

Required: Minimum of three years cooking experience.

Preferred:

Experience working in a Hospital/ Health Care environment.

Prior leadership experience.

Knowledge/Skills/Abilities

Ability to constantly perform well in a high-pressure and fast-paced environment.

Excellent organizational skills to ensure the smooth running of a kitchen.

In-depth knowledge of all the sections in a kitchen to efficiently manage operations.

Strong leadership skills to effectively manage and motivate a kitchen team.

Computer literacy, including a working knowledge of relevant software programs, such as Microsoft Office.

JOB RESPONSIBILITIES

Essential

Assists the Sous Chef in the design of new menu items, seasonal specials, and tasting menus.

Helps to ensure consistency in food quality and presentation.

Conducts a review of the daily meals served. Determines the appropriate portion sizes served, and guarantees recipes are followed including taste testing.

Conducts new employee training and competency reviews.

Monitors staffing call-offs, organizes coverage, and self-fills as needed for coverage in assigned areas to include any and all cooking positions and storeroom clerk roles.

Oversees daily meal production. Assists in maintaining a clean, organized, and efficient kitchen environment. Reports findings to manager after QA checks.

Coordinates kitchen staff which includes involvement in hiring, training, scheduling, and providing feedback for performance evaluations.

Assists in ensuring compliance with health and safety regulations.

Submits work orders as needed.

Conducts daily labels and dating inspections of food storage areas.

Conducts and documents temperature control logs for refrigeration, freezers, warmers and any other food storage or cooking equipment.

Implements corrective actions as needed and submits documentation for work orders or repairs completed.

Additional

Demonstrates the knowledge and skills necessary to provide care and services appropriate to the population served on the assigned unit or work area.

Performs other duties as assigned.
