About Us
Public House is a historic property in the heart of Crested Butte, Colorado consisting of a modern Colorado saloon, boutique hotel, and iconic live music venue. A trusted meeting place in the heart of Crested Butte, Public House celebrates local food and drinks, welcoming accommodations, and the community of live music. Public House is a part of the Grassy Creek family, a private equity firm with offices in London, Amsterdam, Crested Butte, New York, and the Bay Area.
Position Summary
Public House seeks a Line Cook for all kitchen functions including food preparation and maintenance of quality standards; sanitation and cleanliness; preparation, plate presentation, portion; and cost control. This role requires 2+ years cooking experience in a full service restaurant, problem solving abilities, self motivation, and organization, as well as knowledge of ingredients for flavor profiles and basic cooking techniques. The ideal candidate will have a culinary certificate and/or degree, and knowledge of cuisine and familiarity with wine pairings. This full time, seasonal role starts at $25 - $30/hour, depending on qualifications, and potential for company subsidized housing. The seasons run December to April and May to October. Resume and cover letter both required.
Roles and Responsibilities
Position Purpose
  • This position is directly responsible for all kitchen functions including food, preparation and maintenance of quality standards; sanitation and cleanliness; preparation, plate presentation, portion; and cost control.

Responsibilities/Duties/Functions/Tasks
  • Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking, serving standards and presentation guidelines.
  • Set up and stock stations with all necessary supplies.
  • Monitor food quality and freshness.
  • Collaborate with the kitchen team to ensure timely and efficient service.
  • Assist with inventory management and ordering supplies as needed.
  • Properly store all food items to meet sanitation standards.
  • Ensure that all equipment is kept clean and in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs.
  • Maintain appropriate cleaning schedules for kitchen floors, mats, walls, hoods, other equipment and food storage areas.
  • Check and maintain proper food holding and refrigeration temperature control points.
  • Lift heavy objects repeatedly along with shoveling snow and chipping ice.
  • Ensure uniform and personal appearance is clean and professional.
  • Maintain confidentiality of proprietary information, and protect company assets.
  • Develop and maintain positive working relationships with others, and support team to reach common goals.
  • Follow proper trash and recycling practices.
  • Perform calmly and effectively under pressure.
  • Understand guest needs clearly and provide high level service at all times.
  • Execute orders in a timely manner and account for all orders properly and accurately.
  • Communicate additional meal requirements, allergies, dietary needs, and special requests.
  • Maintain full knowledge of all menu items, wines by the glass, beers, and signature drinks.
  • Maintain knowledge of all courses in progress and communications between your team members.
  • Finish all opening and closing duties according to deadlines.
  • Other duties as needed.

Qualifications
  • At least 2 years cooking experience in a full-service restaurant.

Work Requirements
  • Must be willing and able to meet physical demands, including sitting, walking, standing, bending, squatting, climbing, kneeling, twisting, reaching, lifting, carrying, pushing/pulling, stooping, kneeling, crouching, crawling, and tasting or smelling.
  • Must regularly lift and/or move up to 50 pounds and frequently lift and/or move up to 20 pounds.
  • Must be able to occasionally navigate up to 160 pounds, e.g. kegs, etc.
  • Must work around kitchen equipment, machinery, chemicals, fire, gasses and odors.
  • Must work in extreme temperatures, including walk-in refrigerator/freezer and kitchen line.
  • Must work within a loud and noisy environment.
