Job description

NYC Health + Hospitals/Gouverneur is a 295-bed Skilled Nursing Facility (SNF) with a 5-Star CMS Quality Rating located in Manhattan's Lower East Side neighborhood. Gouverneur offers enhanced, cutting edge healthcare services in a state-of-the-art space. It provides 24-hour care for individuals in need of sub-acute care, long-term care or hospice care which include services like physical therapy, occupational therapy, speech and vocational rehabilitation. Gouverneur is an academic affiliate of NYU School of Medicine and Rusk Institute of Rehabilitation Medicine.

Duties & Responsibilities
Purpose of Position:
Under direct supervision, performs work of ordinary difficulty and responsibility in the preparation and cooking of food in a health care facility; performs related work.
Examples of Typical Tasks:
1. Checks menu cards, special and/or modified diet lists to determine types and quantities of foods to be prepared in accordance with standard procedures.
2. Prepares or supervises the washing, trimming, cooking and seasoning of all food items.
3. Utilizes a variety of kitchen utensils and equipment such as blenders, mixers, grinders, slicers and tenderizers in the preparation and cooking of foods.
4. Prepares food utilizing such equipment as steam kettles, grills and ovens. Maintains correct temperatures for all foods.
5. Tastes foods for consistency and seasoning and corrects as necessary to assure proper flavor and texture.
6. Apportions servings and prepares or directs the preparation and distribution of food to serving areas in accordance with departmental standards.
7. Inspects foods and meats in work and storage areas for compliance with storage, safety and sanitary standards.
8. Instructs and supervises all dietary aides assigned to unit and assists in orientation and in-service training programs.
9. Participates in daily menu conferences and confers with Supervisor concerning menus, food preparation, quality recipes, use of leftovers and related matters.
Minimum Qualifications
1. Elementary school graduation through the eighth grade, plus a formal course in basic cooking principles, and a New York City Department of Health Food Protection Course Certificate; and,
2. Two years of full-time, paid experience as a Cook; or,
3. A satisfactory equivalent combination of education, experience and training; and,
4. Ability to read and write English and to understand and carry out instructions.
