Job description

SUMMARY:

Position is responsible for managing the concessions operations of the arena facility. Manages food preparation and service operation for multiple concessions and portables. Responsible for inventory control with an emphasis on production needs. Manages staff, hiring, scheduling and training. Provides premium services and backstage catering at Capitol Federal Amphitheater.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
  • Supervise concessions employees in the preparation and service of food and refreshments, as well as clean-up.

  • Assists in the training of concessions employees engaged in preparing and cooking food to ensure high quality, efficient and profitable food service.

  • Create a positive customer experience and maintain a pleasant attitude when working with staff and customers.

  • Works with Warehouse Manager to purchase concessions product, according to anticipated demand and familiarity with public taste in food and beverages.

  • Works with Director to determine the menu and price.

  • Directs food storage, preparation, and serving of retail products by workers at concession stands.

  • Assigns concessions workers to locations.

  • Tabulates receipts and balances accounts, and generates reports for Finance as needed.

  • Inventories all products located in concession stands, on hand at end of each day or other designated period.

  • Works within guidelines for food and labor costs.

  • Complies with Corporate initiatives, Health Department and ABC regulations.

  • Schedules team using ABIMM for events and day work as needed.

  • Provide premium services and backstage catering to Capitol Federal Amphitheater.

  • Staff and manage team working at Capitol Federal Amphitheater for events, and as needed for catering events in the Lodge.

  • Oversees all NPO groups including scheduling, time keeping, Payroll, and NPO contract management.

  • Works with Director to complete monthly cash handling procedures including reconciling petty cash and vault reconciliation.

  • Work extended and/or irregular hours including nights, weekends and holidays, as needed.

  • Regular attendance is an essential job function.

  • Position requires the ability to work at all Legends Global facilities in Wichita and Andover.

  • Other duties as assigned.

SUPERVISORY RESPONSIBILITIES:

Directly supervises all employees in concessions. Carries out supervisory responsibilities in accordance with Legends Global policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

SKILLS REQUIRED:
  • Demonstrated ability to control costs, generate increased revenue and manage accounts payable/receivable and financial reporting.

  • Strong written, verbal and interpersonal skills.

  • Ability to navigate constant change.

  • Ability to function in a fast-paced, team-oriented environment.

  • Ability to train workers in preparation and cooking food to ensure high quality, efficient and profitable food service.

  • Ability to manage several direct reports.

  • Must be able to pass a background/credit check.

QUALIFICATIONS:

EDUCATION AND/OR EXPERIENCE:

  • Bachelor's Degree (BA) from four-year college or university, desired.

  • 1 to 2 years' related experience and/or training.

  • Or equivalent combination of education and experience.

  • Previous management experience in a similar venue.

COMPUTER SKILLS:

  • Experience working with Excel, Word, and Outlook Microsoft 265, preferred.

  • Experience with POS software used in F&B, preferably Clover Sport.

  • Experience with recruiting software and timekeeping software, ABIMM preferred.

CERTIFICATES, LICENSES, REGISTRATIONS:

  • ServSafe Manager Certification

  • ServSafe Alcohol Certification

  • ServSafe Allergen Certification
