Job description

About the Role

We are looking for a detailed, hands-on Gummy Confectioner / Candy Cook to join our production team. In this role, you will be responsible for cooking batches of high-quality gummy confectionery and executing precise manual depositing using traditional pour-and-scrape molding methods.

If you have a strong eye for quality, thrive in a fast-paced kitchen/production environment, and take pride in crafting perfect gummies batch after batch, we’d love to have you on our team.

Key Responsibilities

  • Batch Preparation & Cooking: Accurately measure, weigh, and cook raw ingredients (gelatin, pectin, sugars, flavorings, colorants, active ingredients) according to strict recipe standards.
  • Pour & Scrape Executions: Expertly pour hot cooked gummy slurry onto silicone or polycarbonate molds, using manual scraping tools to ensure clean, even filling and minimal product waste.
  • Temperature & Viscosity Control: Monitor cooking temperatures, Brix levels, and slurry setting times to ensure proper texture, clarity, and consistency.
  • Quality Assurance: Inspect finished product for visual defects, air bubbles, weights, and proper curing before demolding.
  • Sanitation & Food Safety: Maintain a clean, sanitized workstation adhering to Good Manufacturing Practices (GMP), standard operating procedures (SOPs), and health standards.
  • Equipment Care: Clean, sanitize, and maintain cooking kettles, depositors, scrapers, molds, and auxiliary kitchen equipment after each batch run.
  • Batch Logging: Accurately complete batch production records, inventory tracking logs, and quality check forms.

Qualifications & Skills

  • Experience: 1+ years in commercial baking, candy making, kitchen/line cook work, or food manufacturing preferred. (Experience specifically with gummy or jellied confections is a huge plus!)
  • Physical Stamina: Ability to stand for extended periods, perform repetitive hand/arm movements (essential for manual scraping), and comfortably lift up to 50 lbs.
  • Attention to Detail: Excellent hand-eye coordination to minimize waste and ensure every mold cavity is filled cleanly and accurately.
  • Math & Measurement Skills: Basic math skills for scaling recipes, calculating yields, and weighing ingredients precisely.
  • Food Safety Knowledge: Familiarity with Food Safety/GMP standards.
  • Team Player: Strong communication skills and a positive, reliable attitude.

Work Environment & Physical Demands

  • Work is performed in a cleanroom or commercial kitchen production environment.
  • Exposure to warm cooking temperatures, steam, and food aromas.
  • Requires standing, bending, lifting, and repetitive wrist/arm motion throughout the shift.
