What does this role involve?
Reporting to the Head Brewer, the Brewer/Cellar Operator is the heartbeat to the production floor, proficient and engaged in all aspects of the beverage production ensuring optimal fermentation, conditioning, and quality control throughout the production process. You'll work side-by-side with an on-site Head Brewer, Head Innovation Brewer and Warehouse Operator, as well as Virginia Beach based supply chain/procurement, maintenance and quality teams. You will be in a front-line floor position, diving headfirst into all brewing and cellaring operations of the brewery and open to expanding your knowledge base to all four corners of the production floor. You will be participating in a culture of ownership, teamwork, and continuous quality improvement.

What You’ll Do
  • Execute core-brand brew day operations ensuring recipe adherence and quality standards.
  • Execute comprehensive CIP operations for all cellar equipment and fermentation vessels.
  • Manage all cellar operations including fermentation monitoring, crash cooling, fining, transfers, and carbonation.
  • Maintain detailed daily process documentation of all beverage operations.
  • Support yeast management and propagation activities.
  • Participate in release-to-package approval processes including daily sensory evaluation panels.
  • Conduct comprehensive QA/QC checks including daily gravities, pH, DO monitoring, ABV testing.
  • Maintain strict adherence to food safety and quality protocols.
  • Document all quality metrics and deviations for continuous improvement.
  • Assist with packaging operations (can/keg) and associated quality checks.
  • Contribute to warehouse inventory management and stock rotation.
  • Identify and document process improvements and non-conformances with leadership and quality teams.
  • Participate in daily cross-department scrums keeping all appropriate parties abreast with relevant information and updates.

Who We’re Looking For
  • 3 or more years of commercial experience in a brewery or beverage production setting.
  • Degree or certification from a respected brewing institute (Chartered Institute of Brewers and Distillers, Siebel, UC-Davis, Heriot-Watt) ideal.
  • Qualifications in professional organizations such as the Master Brewers Association of the Americas (MBAA), American Society of Brewing Chemists (ASBC) are highly regarded.
  • Technical experience in a commercial brewing/beverage environment with a mechanical aptitude showcasing strong knowledge of automated brewhouse, CIP/SIP, yeast handling, filtration and blending.
  • Strong understanding of brewing chemistry, microbiology, and quality systems
  • Excellent documentation and organizational abilities
  • Experience with cGMP and understanding of HACCP and Food Safety Programs ideal.
  • Strong computer skills with proficiency in Microsoft Office Suite and ERP/MRP systems (Ekos, Orchestrated, SAP, etc.).
  • Forklift certified; able to lift 55 lbs, work in temperature extremes, and stand for extended periods.
  • A calm, flexible, and solution-focused mindset.

While performing the duties of this Job, the employee is regularly exposed to moving mechanical parts; fumes or airborne particles; toxic or caustic chemicals and risk of electrical shock. The noise level in the work environment is usually moderate.
