Position Summary:

This position is responsible for the daily operations of all beverage outlets including the Casino Floor Beverage operation, all cocktail lounges and restaurant service bars.

Primary Duties and Responsibilities: includes but not limited to:

  • Supervises daily activities of Beverage Supervisors and staff to ensure adherence to established standards and steps of service
  • Ensures efficient beverage service through beverage control and inventory maintenance
  • Assists in training, evaluating and scheduling of the beverage staff
  • Enforces state liquor laws including, proper identification procedures, monitoring levels of intoxication, intervention strategies, refusal of service and shutoff procedures
  • Assists with on-going coaching programs with line employees to enhance skills

Secondary Duties and Responsibilities:

  • Works with the Stewarding and EVS departments to maintain health, safety and sanitation guidelines
  • Assists in cleaning of bars and heavy duty cleaning, when necessary
  • Works with the Engineering department to maintain the outlet's furniture, fixtures and physical layout
  • Recommends hiring as well as termination decisions in conjunction with the disciplinary process

Minimum Education and Qualifications:

  • High School Diploma or equivalent
  • Three years of beverage experience in a high volume, complex casino environment
  • One year of supervisory experience

Competencies: Incumbent will master the following competencies while in this position:

  • Excellent written and verbal communication skills
  • Thorough knowledge of operational policies with regard to hours of operation, types of menus offered, restaurant concepts and marketing programs
  • Excellent knowledge of spirits, beer, wine, glassware, garnishes and all beverage service techniques
  • Knowledgeable in point of sale system, Stratton Warren, Microsoft Word, Excel and Lotus Notes
  • Excellent knowledge of state liquor laws including proper identification procedures, monitoring levels of intoxication, intervention strategies, refusal of service and shutoff procedures
  • Complete knowledge of the shift bidding process
  • Strong knowledge of the overall property and gaming floor

Training Requirements:

  • Must complete the Core Manager training program
  • Understanding of Ascent and EmpowerTime systems
  • Outlet-specific standard operating procedures
  • Point of sale (POS) training
  • SMART alcohol awareness
  • LMS Compliance Courses - Harassment, Confidentiality and Problem Gambling

Physical Demands and Work Environment:

  • Must be able to stand, walk, lift and bend for extended periods of time
  • Must be able to work in a fast paced, high volume environment with frequent interruptions
  • Must be able to work various shifts and flexible hours
