Job Summary
The Sanitarian is responsible for promoting and maintaining the highest standards of food safety, sanitation, and regulatory compliance throughout all food and beverage operations. This position leverages a strong culinary administration background to support operational excellence, conduct inspections, ensure compliance with health and safety regulations, and provide training and guidance to culinary and front-of-house teams. The Sanitarian serves as a key resource in maintaining a safe environment for guests and team members while supporting quality assurance initiatives across the venue.
Key Responsibilities
  • Monitor compliance with all food safety, sanitation, and health department regulations.
  • Conduct routine inspections of kitchens, concession stands, premium clubs, suites, warehouses, and storage areas.
  • Identify food safety risks and develop corrective action plans to address deficiencies.
  • Support culinary leadership with food safety programs, audits, and operational assessments.
  • Maintain sanitation logs, temperature records, cleaning schedules, and compliance documentation.
  • Assist with health department inspections and regulatory visits.
  • Investigate food safety concerns and implement preventative measures.
  • Train and coach team members on food safety, sanitation, personal hygiene, allergen awareness, and safe food handling practices.
  • Ensure compliance with HACCP principles, company policies, and industry best practices.
  • Monitor proper food storage, labeling, rotation, and temperature controls.
  • Develop and maintain Standard Operating Procedures (SOPs) related to food safety and sanitation.
  • Partner with culinary, warehouse, concessions, and premium operations teams to support a culture of safety and accountability.
  • Assist with administrative tasks including compliance reporting, audit preparation, training records, and documentation management.
