Job description

Expediter

Position Description:
Act as the liaison between the service staff and the chef and his staff so as to keep communication lines direct, orderly and precise. Effectively makes sure that all orders reach the intended tables and reaches them correctly.
Work Performed:
  • Accept and relay all special instructions (C-Server) from server to chef/cooks regarding any food preparation requests that fall outside of normal recipe execution, especially dietary and food allergy adjustments; records those special instructions on pertinent food order print-outs so as to be accurate and safe.
  • Manage all food order print-outs to insure all information needed to process an order from the printer to the stove is present and clear, i.e.: temps, splits, add, etc., as well as keeping checks in chronological order.
  • Communicate food items and timing between various stations (pantry, raw bar, sushi, etc.) so as to assure simultaneous delivery of hot with cold foods when ordered within the same course of service.
  • Collate all completed food items necessary to fulfill a completed check and assembles those items on to service trays, acquires and directs server/runner for timely delivery to guest. To do the above he must maintain clean, dry service trays, mar amp; confirm accuracy of C-Server orders, apply final plate garnish as needed, clean/polish all plate rims, add any special service ware and condiments as well as plating some side dishes and sauces.
  • This position is, in essence, that of a server’s assistant, allowing the server to spend more time with the guest, in the dining room, bringing the HIGH TOUCH

Physical Requirements:
  • Ability to stand and walk during 8 to 10 hour shifts.
  • Ability to reach, bend, stoop and wipe to perform essential job functions.
  • Ability to lift and carry large trays weighing up to 30 pounds through a crowded room.
  • Ability to work under pressure and deal with stressful situations during busy periods.

Required Experience:
  • Complete knowledge of the appropriate table settings and service ware.
  • Basic knowledge of food amp; beverage menus
  • Ability to understand verbal English to comprehend basic guest requests.
  • Ability to understand written English to read any caution or safety notices.
  • Ability to grasp, lift and/or carry, or otherwise, transport up to 45 lbs. through a crowded room.
  • Work efficiently amp; as a team
  • Knowledge of resort layout
  • Observe all safety procedures during the execution of assigned duties.
  • Observe restaurant policies regarding uniform, hygiene and grooming.

Minimum requirements:
Any combination of education, training or experience that provides the required knowledge, skills and abilities. Prior hospitality experience preferred. Needs to be flexible, self-motivated, and positive and have a professional attitude towards guests, co-worker and management. Must also be able to perform all related duties as assigned.
