Insa, the legendary Korean BBQ and Karaoke joint in Gowanus, Brooklyn, is looking for a hard working, passionate & enthusiastic Sous Chef to assist lead our thriving culinary team & program. As we head into our second decade as a beloved Brooklyn restaurant, we are seeking someone to join our amazing team who shares our commitment to excellence in food, clear communication, and a fun, respectful workplace. The Sous Chef will assist in teaching, modeling, and upholding the highest standards of: preparation, time management, food production, food costing, service execution, restaurant organization, and grace under pressure. Our ideal candidate is someone who can help lead with compassion and empathy, while balancing the operational demands of the position.

Responsibilities include (but are not limited to):

• Assist in leading the culinary team, before, during and after service - making sure that the team is prepared and ready before, focused and performing during, and constructively looking for opportunities for improvement afterwards.

• Effectively communicating and providing direction to the team, prioritizing tasks and managing demands, so that all daily tasks are completed in a timely and seamless manner.

• Ability to work all stations, as needed, and making sure that all stations are set up and prepared for a successful service.

• Overseeing quality and consistency in all food production and execution.

• Assisting Executive Chef in ordering, especially when he is away: inventory management in accordance with par systems, as well as reviewing products on a daily basis to ensure quality is consistent with kitchen standards. 

• Assisting in the management of back of house team members, including training new hires and reviewing food preparation, food safety and equipment operation.

• Assisting in the creation and implementation of systems and procedures for maintenance and operational efficiency: including nightly cleaning and deep cleaning of kitchen: machines, storage, low boys and walk ins.

• Collaborate with the Executive Chef on menu development, seasonal specials, and recipe testing.
• Take full operational ownership of the kitchen in the Head Chef's absence.
• Ensuring all health and safety standards are upheld by enforcing high sanitation standards.
• Meeting with and coordinating with both front and back of house managers in order to be aligned to the overall goals and objectives of the restaurant and having a working knowledge of the financial demands of the operation.
• Minimize food cost, waste & time management.
• Report issues as soon as it arises to management. 

Qualifications

• At least 2 years of leadership experience, preferably at a high volume, busy restaurant.
• Must be able to work during weekends.

• Passion for creating memorable guest experiences through cooking and hospitality.

• Ability to handle multiple tasks in a fast-paced work environment effectively, without losing focus on priorities, and while maintaining a high level of quality. 

• Should have a desire to continue learning.
