Bob's Steak & Chop House
Since the opening of the first Bob's Steak & Chop House in Dallas, Texas, in 1993, the name "Bob's" has been synonymous with a great steakhouse experience. Building on the reputation we earned at our original Dallas location, Bob's has opened restaurants nationwide that offer the best cuts of meat available. Bob's Steak & Chop House specializes in serving big, flavorful steaks that are hand-selected from the top two percent of USDA prime beef along with Texas-sized portions of our award-winning sides. Mouth-watering, legendary seafood and cuts of meat are delicious as we use homemade and local ingredients to enhance the flavor of our signature menu items. When it comes to Wine, each Bob's carries a large selection - usually 300 to 500 wines - beyond our core list of favorites. In-house wine buyers select wines from all over the world to satisfy local clientele and regulars at each of our locations. Each Bob's utilizes climate-controlled wine cellars and features Wine of the Month for our guests to try.

Responsibilities
  • *To follow, enforce, comply and adhere to all Bob's Steak & Chop House rules, policies, procedures, standards and recipes at all times.
  • Assume all GM roles and responsibilities in his/her absence.
  • Work closely with GM on Labor/Sales Forecasting
  • Ability to Assist with Budget Preparation
  • Assist GM with Cost Controls and implementation.
  • Strong familiarity with P&L
  • Assist GM with the Profitability and Flow Through
  • Ability to write an Action Plan to for Controlling Costs
  • Staff Accountability
  • Direct Operational Communication with HR and Hotel GM
  • Management Scheduling and PTO approvals
  • Oversee the Daily Operations
  • Responsible for assigned shift, assisting in overall management.
  • Supervise and coordinate assigned shift.
  • Assist in overall supervision of the department as outlined in manager's job description.
  • Check staff punctuality.
  • Complete environmental checklist for dining room (Ensure music levels and lighting at proper levels.)
  • Spot check liquor pars.
  • Order daily supplies.
  • Hold pre-meal meetings.
  • Follow up on established training steps.
  • Handle guest comments and complaints.
  • Ensure guest satisfaction.
  • Stay on the floor during peak hours.
  • Communicate with guests and receive feedback.
  • Observe, teach, and correct staff's service.
  • Monitor each guest experience.
  • Examine food preparation.
  • Examine beverage presentation.
  • Administrative responsibilities.
  • Assist manager in:
  • Scheduling
  • Forecast weekly
  • Forecast monthly
  • Completing weekly payroll
  • Participate in interviewing new employees.
  • Prepare maintenance requests and follow-up.
  • Cost control
  • Monitor food and liquor requisitions
  • Monitor food waste.
  • Monitor labor and payroll costs.
  • Check bar controls, shot glass use, red lining, bottles totally empty.
  • Must be familiar with and adhere to all liquor liability laws:
  • Dram Shop Act - Prohibiting the sale/service of alcohol to intoxicated guests.
  • Prohibiting the sale/service of alcohol to minors.
  • Must know emergency procedures (including CPR) and work to prevent accidents

Qualifications
  • 2-years restaurant management experience.
  • Upscale steak house management experience is strongly preferred however other fine dining and/or hotel food & beverage leadership experience will be considered.
  • Candidate must have proven leadership skills and must be able to train, develop, and motivate staff.
  • Ability to teach employees importance of, and how to interact with internal/external guests and courteously solve internal requests.
  • Ability to train a staff to produce high volumes of work while maintaining quality per Omni and Bob's standards.
  • Ability to set priorities for the Bob's team and provide feedback to others that enhances performance.
  • Prior experience managing schedules, payroll, service recovery and associate relations matters required.
  • Ability to clearly and pleasantly communicate both verbally and in writing in English with guests, management, and co-workers, both in person and by telephone.
  • Ability to multi-task and work in fast paced environment.
  • Must be proficient with computers.
  • Ability to work well under pressure, managing a high volume of orders and guest requests.
  • Strong organizational skills with the ability to multi-task and provide guest follow up in a fast-paced environment.
  • Possess an unexpired or have the ability to obtain a State of Tennessee Alcoholic Beverage Commission server permit.
  • Must be able to work a variety of shifts, including weekends and holidays.
  • Move, bend, lift, carry, push, pull, and place objects weighing up to 40 pounds without assistance.
  • Stand or walk for an extended period or for an entire work shift.
  • Requires repetitive motion. May work both indoors and outdoors
