Job description

We are seeking an exceptional Vice President of Operations to lead the operational strategy, execution, and performance of two of Las Vegas' most iconic restaurant brands.

This executive will be responsible for protecting the legacy of both brands while building the operational systems, leadership teams, and infrastructure necessary to support disciplined growth. The position requires a hands-on operator who thrives in an entrepreneurial, founder-led environment and understands both high-volume casual dining and upscale hospitality.

This is a highly hands-on leadership position. The Vice President is expected to spend the majority of their time inside the restaurants, coaching teams, developing leaders, improving operations, ensuring exceptional guest experiences, and driving financial performance. The successful candidate leads from the field—not from an office.
This position is based in Las Vegas, Nevada, where both brands currently operate. Candidates must currently reside in the Las Vegas area.

Key Responsibilities for Vice President of Operations:
Operational Leadership:
  • Provide executive leadership for the day-to-day operations.
  • Build a culture centered on hospitality, accountability, operational excellence, and execution.
  • Establish operating standards that consistently deliver exceptional guest experiences.
  • Ensure operational consistency across all locations while preserving the unique identity of each brand.
  • Continuously improve restaurant systems, processes, and operating efficiency.

Financial Leadership:
  • Drive sales growth, restaurant profitability, and EBITDA performance.
  • Own restaurant P&Ls and operating budgets.
  • Improve labor productivity, food cost, purchasing controls, and overall operating margins.
  • Analyze financial performance and implement action plans that improve results.

Leadership & Talent Development:
  • Recruit, develop, and retain exceptional restaurant leaders.
  • Coach General Managers and management teams through regular field visits and hands-on leadership.
  • Build a culture of accountability, ownership, and continuous improvement.
  • Develop succession plans and identify future operational leaders.

Guest Experience:
  • Champion world-class hospitality throughout both brands.
  • Continuously evaluate guest satisfaction, food quality, cleanliness, speed of service, and operational execution.
  • Identify opportunities to elevate the guest experience while preserving the heritage and personality of each brand.

Training & Operational Systems:
  • Develop scalable operating systems that support continued growth.
  • Improve training programs, onboarding, and leadership development.
  • Standardize best practices while maintaining each brand's unique operating culture.
  • Ensure operational excellence is consistently executed across all shifts.

Food Safety & Compliance:
  • Maintain the highest standards of food safety, sanitation, and regulatory compliance.
  • Ensure compliance with HACCP, OSHA, Southern Nevada Health District regulations, and company standards.
  • Oversee operational audits and corrective action programs.

Growth & New Restaurant Openings:
This executive will lead all operational aspects of new restaurant openings, including:
  • Operational planning.
  • Staffing and recruiting.
  • Training.
  • Pre-opening readiness.
  • Grand opening execution.
  • Post-opening operational support.

The Vice President will build the operational foundation necessary to support disciplined multi-unit growth.

Cross-Functional Leadership:
Partner closely with executive leadership and shared services, including:
  • Marketing
  • Finance
  • Human Resources
  • Construction & Development
  • Purchasing
  • Culinary
  • Information Technology
to ensure seamless execution across both brands.

Qualifications for Vice President of Operations:
  • Minimum 10 years of progressive multi-unit restaurant operations leadership.
  • Demonstrated success leading high-volume restaurant operations.
  • Strong financial acumen with extensive P&L management experience.
  • Proven ability to improve restaurant profitability and operational performance.
  • Experience opening new restaurant locations.
  • Exceptional leadership, coaching, and talent development skills.
  • Excellent communication, organizational, and strategic planning abilities.
  • Comfortable working in a fast-paced, entrepreneurial, founder-led environment.
  • Must reside in the Las Vegas market.

Preferred Experience of Vice President of Operations:
  • Premium Fast Casual.
  • Bakery/Café.
  • Breakfast concepts.
  • Full-Service Dining.
  • Fine Dining.
  • Hospitality-focused restaurant organizations.
  • Experience leading multi-unit restaurant operations through periods of growth and expansion.

Leadership Characteristics of Vice President of Operations:
The ideal candidate will:
  • Lead by example and maintain a highly visible presence in the restaurants.
  • Build credibility through action rather than delegation.
  • Coach managers in real time and develop future leaders.
  • Be passionate about hospitality, food quality, and guest satisfaction.
  • Hold teams accountable while earning their trust and respect.
  • Have exceptional attention to operational detail.
  • Create systems that improve execution without adding unnecessary bureaucracy.
  • Thrive in a fast-paced, entrepreneurial environment.
  • Be equally comfortable reviewing financial performance in the morning and working alongside restaurant teams during a busy lunch or dinner service.

Success in the First 12 Months for the Vice President of Operations
The successful candidate will:
  • Improve operational consistency across both brands.
  • Strengthen restaurant leadership teams.
  • Improve guest satisfaction and operational execution.
  • Increase restaurant profitability.
  • Develop scalable systems and operating procedures.
  • Successfully lead the operational execution of new openings.
  • Build a strong leadership pipeline capable of supporting continued growth.
  • Create an operational culture that reflects commitment to hospitality, excellence, and disciplined execution.

Why This Opportunity?
This is a unique opportunity to lead the operations of two iconic brands while working directly with ownership and executive leadership to shape their next chapter of growth. If you are a hands-on restaurant operator who believes great leadership happens in the restaurants—not behind a desk—we want to hear from you.
