With properties in stunning locations such as Maine's Acadia National Park, the Southern Maine Beaches, and Mid Coast Maine, Lafayette Hotels offers a perfect blend of work and adventure.

The Tugboat Inn is an historic Boothbay Harbor hotel with a full service restaurant, pub, roof top deck and marina.We are open from early May to late December, and cater mainly to tourists, although we have a strong local following as well.We serve lunch and dinner 6 days a week (closed on Wednesdays), and serve a pub menu in between meal periods in the pub and on the roof top deck.In peak summer we serve between 300 and 400 people per day spread out over the 3 food outlets.We also enjoy a late mini season in December, with tourists visiting our area for the holiday season.

Job Summary

We are looking for an experienced Sous Chef to assist our Chef in all aspects of kitchen operations, with the goal of eventually taking over the reigns in the kitchen. Communication and team work are critical, as is being a strong line leader who works well under pressure.

Daily Duties

  • Lead the kitchen line preparing and executing a variety of foods, quantities and styles according to the menu
  • Use proper knife skills, cooking techniques, cooking methods and terminology
  • Read, understand and follow standardized recipes when preparing all foods for all food venues and outlets
  • Understand and follow through with all assigned tasks
  • Clearly communicate with management, back of house and front of house employees regarding day to day activity
  • Work with the Chef to maintain the foods/products needed to ensure safe and proper par and stock levels
  • Maintain a clean, organized and sanitized work area while following all city, state and federal health/food safety regulations and codes
  • Ensure all areas of their assigned venue/outlet/kitchen are taken care of and all assigned duties are completed
  • Responsible for all food/storage areas (refrigeration, freezer, dry storage) are kept clean, organized, labeled and dated
  • Responsible for all equipment, tools, floors, work stations and food prep areas are kept clean and organized
  • Contribute to a team effort in accomplishing all tasks
  • Maintain a positive and professional work environment
  • Performs other duties as required

Requirements & Qualifications

  • Ability to bend, push, pull and lift 50 pounds
  • Ability to stand and walk for hours at a time
  • High school degree or GED required
  • Three years of recent experience as a cook or as a kitchen attendant; or equivalent combination of recent experience and education
  • Must be self motivated and willing to take initiative when needed
  • Must be at least 21 years of age
  • Team player with solid communication skills
  • Consistently available to work scheduled shifts including weekends and holidays
