Cart is open 11:30 AM – 9:00 PM.

Shifts primarily cover full service hours. Prep is done during service as much as possible. Flexible days preferred; availability for weekends and consistent shifts is important.


Job Description:

I Love Ceviche: Surf & Turf is looking for a strong, proactive Lead Cook who can actually run the cart.

This is not a basic line cook role. Right now the owner is doing too much. We need someone who can operate independently, keep the line moving, handle problems when they come up, and take real ownership of service.

What you’ll do:

•  Run Toast POS (orders, payments, and basic troubleshooting)

•  Prep during service as much as possible (we want minimal dedicated prep time)

•  Grill steaks to order and run the fryer

•  Execute the full menu (ceviche, fish & chips, surf & turf, plantain empanadas, etc.)

•  Supervise workflow and any other staff on shift

•  Stay organized and proactive in a small, high-volume kitchen

•  Handle the unexpected calmly (equipment issues, ticket spikes, customer problems, etc.)

•  Maintain food quality, speed, cleanliness, and food safety standards

Who we’re looking for:

•  Experience as a line cook, lead cook, or similar in a fast-paced kitchen or food truck

•  Comfortable on a POS (Toast experience is a big plus)

•  Solid grilling and fryer skills

•  Can work independently and take initiative without being told what to do every step

•  Reliable and proactive — you see problems coming and fix them

•  Available for shifts that cover 11:30 AM – 9:00 PM

•  Food handler card (or willing to get one quickly); ServSafe preferred

Nice to have:

•  Previous food cart/truck experience

•  Culinary training (COCC or similar)

•  Leadership or supervisory experience
