SHEEP by the Wolf's Tailor - a residency at The Clayton Members Club
About the role:

We are hiring cooks for a three-month position with possible growth opportunities with Id Est beyond the residency. We are seeking candidates available to start asap, who come with experience and curiosity. This will be a period of exploration and opportunity to work alongside Two-Michelin starred Chef Taylor Stark and Kelly Whitaker. The menu is an extension of The Wolf's Tailor, keeping the core values while creating a more approachable format. SHEEP will offer a four course pre-fixe style menu starting at $95pp.
About the concept:
From the creative culinary mind of Kelly Whitaker of Id Est comes SHEEP, a three-month residency inside the Clayton Hotel & Members Club, Cherry Creek (233 Clayton St, Denver, CO 80206). SHEEP presents a new expression of The Wolf’s Tailor story, magnifying the focus on elemental ingredients shaped by fire, smoke, and season to bring guests closer to the source and invite exploration. Tethered by a roaring hearth and open-fire cooking traditions, SHEEP’s four-course tasting menu offers guests choices for each course, blending a traditional tasting menu format with a guest-led experience. SHEEP opens on the property’s sixth-floor rooftop and is available for a limited residency from July 8 through October 4, 2026 for club members, hotel guests, and the public.
