Paco's Tacos & Tequila was founded with a vision to bring the bold, authentic flavors of Tex-Mex cuisine to Charlotte. Under the guidance of James Beard award-winning Tex-Mex culinary expert Robb Walsh, our menu is crafted to showcase the richness and diversity of Tex-Mex culinary traditions. From our wood-fired grilled fajitas to our cheese enchiladas with chili con carne, each dish is a testament to our dedication to excellence and authenticity. A "Day in the Life" as a Sous Chef at Paco's Tacos & Tequila:

You will be responsible for overseeing all aspects of the restaurant's culinary operations, including scheduling, ordering, hourly hiring, and shift execution. You will ensure that there is management presence in the kitchen by communicating with additional chefs on duty and delegating daily culinary tasks.

Sous Chef Responsibilities:

Collaborate with Executive Chef to ensure positive guest experience, exceeding dining expectations when it comes to food quality and consistency.

Assist in the hiring, supervision, and development of culinary teams, fostering a positive and motivating work environment.

Skillfully assess day-to-day culinary operational demands and address restaurant concerns effectively.

Assist the Executive Chef in ensuring accurate and efficient completion of all culinary related financial, personnel, and administrative duties in accordance with company policies and procedures.

Uphold health safety and sanitation standards, including food handling, cleanliness, and restaurant maintenance.

Sous Chef Requirements:

High school diploma (four-year degree or culinary degree preferred) with a continued eagerness to learn.

Minimum of 2 years of full-service culinary management experience in a high-volume kitchen.

Ability to lift 50lbs.

Advanced knowledge of food safety and sanitation requirements in Mecklenburg County.

Strong problem-solving skills.

Great interpersonal and communication skills.

Advance knowledge of professional cooking, knife handling skills, and a voracious appetite for knowledge.

The ability to pivot when curve balls get thrown at you and keep your composure.

Valid ServSafe certification is a plus!
