SUMMARY OF POSITION

The Prep Cook / Dishwasher supports daily kitchen and seafood production operations through food preparation, sanitation, dishwashing, and receiving. This role ensures a clean, organized, and efficient kitchen while assisting with seafood processing and prep tasks.

This is an entry-to-mid level kitchen position ideal for someone who enjoys hands-on work, early mornings, and learning seafood production skills.

GENERAL DUTIES AND RESPONSIBILITIES

This position requires flexibility and the ability to perform a variety of tasks in a fast-paced environment.

The duties listed are representative but not exhaustive. Management reserves the right to modify duties

and assign additional responsibilities as needed to meet operational or business demands.


Dishwashing & Sanitation

  • Wash dishes, pots, pans, utensils, and production equipment
  • Maintain clean and sanitized workspaces
  • Follow all health and safety standards
  • Manage trash, recycling, and compost

Food Prep & Production Support

  • Perform basic prep including chopping, cutting, peeling, portioning, and packaging
  • Assist with seafood processing and simple fish prep tasks
  • Use knives safely and efficiently
  • Follow recipes and production instructions

Receiving & Organization

  • Assist with receiving deliveries and storing product properly
  • Label, date, and rotate inventory using FIFO practices
  • Keep storage areas organized

Kitchen Support

  • Maintain clean prep stations
  • Restock supplies throughout shifts
  • Support cooks and production staff as needed

Communication

  • Use email or basic systems to communicate with team leads
  • Report maintenance or inventory needs promptly

GOALS

  • Deliver consistently excellent and tasty food that makes customers happy to be here and return using local, seasonal and sustainably-produced products adhering to Seafood Watch standards. 
  • Foster teamwork and a sense of camaraderie; Create and maintain a happy, comfortable, respectful, cooperative and collaborative workplace.
  • Familiar with all kitchen work stations, able to work any station at a moment's notice
  • Learn, model, and convey Hog Island Values and Guiding Principles in the daily work environment.

SKILLS AND EXPERIENCE

  • 6+ months kitchen, dishwashing, or food prep experience preferred
  • Basic knife skills and willingness to learn seafood processing
  • HACCP or seafood handling knowledge a plus
  • Ability to work weekends and holidays
  1. Ability to work under pressure and deal with stressful situations during busy periods; 
  2. Ability to communicate clearly and respectfully with staff and management (bi-lingual a plus)
  3. Must be consistently proactive, punctual, organized, efficient, solution oriented, and positive; 
  4. Familiarity with Kitchen SOPs and safety practices
  • Strong attention to cleanliness and organization
  • Ability to follow instructions and work efficiently
  • Team player with a positive attitude
  • Comfortable working around water, seafood, and cleaning chemicals
  • Ability to multitask in a fast-paced kitchen
  • Seafood experience a plus but not required
