Job description

Smoked Meat Team Player’s Mission
Effectively carry out the Prasek’s mission by actively servicing customer and working with and carry out the tasks delegated by the Market Manager

Essential Functions
- Present a positive, professional, image to every customer, whether in person or over the phone
- Greet every customer who walks up to the counter
- Accurately take orders in a friendly, helpful manner, whether in person or over the phone
- Promptly cut quality meats and assemble orders as requested by customers
- Properly use the scale to weigh meats to ensure orders are priced correctly and the tickets are printed correctly
- Wrap products according to Prasek’s procedures
- Promote Prasek’s products and specials through suggestive selling
- Answer customer phone calls for bakery department according to Prasek’s Standards of Operations procedures
- Maintain adequate product inventory of counter/meat case and use proper rotation procedures when stocking
- Inspect meats for signs of discoloration
- Demonstrate a sincere concern and sense of urgency to remedy any problem a customer may have and notify the Manager on duty if necessary
- Follow all cutting and wrapping for fresh meat, smoked meat and lunch meat as outlined in the Standards of Operations Manual
- Ensure that all self-serve and services cases are stocked and correctly merchandised
- Practice good personal hygiene and sanitation procedures
- Maintain cleanliness and sanitation standards in all areas of the Market (food preparation, storage and assembly)
- Perform all cleaning and maintenance functions required to maintain a clean and safe Meat Market
- Perform closing and cleaning procedures as indicated on the Opening/Closing Checklist
- Ensure that all equipment, i.e., meat grinder, meat stuffer, meat saw, slicers, knives, cutting boards, tubs, utensils, etc., are properly cleaned, sanitized and stored
- Perform all job duties in a safe manner
- Operate equipment used in the meat market according to proper procedures and notify the Management of needed equipment repairs
- Notify the Manager on duty of any unsafe conditions or safety violations
- Abide by all company policies and procedures as detailed in the Prasek’s Hillje Smokehouse Team Player Handbook and Operating Manuals

- Possess an overall knowledge of smoked meats and value added products, i.e., quality, ingredients, production processes, preparation methods, storage methods and uses
- Possess an knowledge of meat quality, safety, fabrication, merchandising and marketing, processing and processes, selling, use and cooking techniques

Physical and Other Requirements
- Must be 18 years of age or older
- Must be able to lift and carry 60 pounds
- Must be able to stand, walk, bend, reach, kneel, squat, reach overhead and side-to-side for an extended period of time
- Must be able to move safely around equipment and possess dexterity in hands and fingers
