Job Summary

The Lead LineCook, or Cook 3,is responsible forthe co-management of a specific outlet within Crystal Mountain Resort Culinary Operations and works to provide the best possible guest experience within the restaurant. Trains, coaches, andleads culinary staffin exemplary adherence toculinaryguidelines, food safety, and standard operating procedures. Follows recipes, chef guidance on stations, SOP's,and all safety regulations. Responsible for the overall cleanliness and sanitation ofkitchenstationsand the delivery of high quality and properly served food & beverage products. Works to develop a positive public image of his/her specific outlet and Crystal Mountain Resort.

Essential Job Functions of Lead LineCook

  • The lead cook's main responsibility is toassisttheExecutive SousChef in seeing that the fulfillment of the necessary tasks that are crucial to the success of the operation are met. This includes thorough training and direction of staff members, and ensuring that standards of service, sanitation, cleanliness,healthand quality are met.

  • Acts as manager of BOH operations in absence of theExecutive SousChef.

  • Has a higher in-depth understanding of knife work, prepwork,and theability to work all stations

  • Ability to train Cook I &II's

  • Production of a high quality, healthy,safefoodand beverage product.

  • Maintain a clean and sanitaryKitchenand restaurant; follow proper HAACP procedures.

  • Assistin recipe adherence and proper production procedures.

  • Promote positive professional culinary culture throughout our F&B outlets and theresort.

  • Maintain a safe work environment and adhere to all established safe practices.

  • Assist the Chef with the daily cleaning ofallkitchen areas.

Job Requirements:

  • Ability to ObtainWAFood Safety Card within 3 Days of Hiring.

  • Ability to stand forlong periods,8 hours at a time

  • Some culinary outlets require Intermediate Skiing/ Snowboarding ability.

  • Ability to work nights, weekends, and holidays,differentvenuesand/or locations.

  • 3-5 years of kitchen operations experience

PHYSICAL DEMANDS AND WORKING CONDITIONS

  • This positionisrequiredtoworkevenings, weekends and holidays,differentvenuesand/or locations.

  • Able to lift, carry, or otherwise move and position a minimum of50 pounds on an occasional basis.

  • Ability to work for extended periods of time bending, reaching, and speaking on a constant basis.

  • Ability to work for extended periods of time standing, walking, kneeling,pushingand pulling on an occasional basis.

  • Talking and hearing occur continuouslyin the process of communicatingwith guests,supervisorsand other employees.
