The Role
If the kitchen is an engine, Set Up / To Go is the transmission. Everything runs through you. Dine-in items prepared, curbside orders being built, online orders coming in - all at the same time, all needing your attention, all needing to be right.
This station doesn't slow down. During a rush you'll be holding multiple orders in your head, calling out to you crew, communicating with servers, and keeping it all moving without missing a beat. The pace is relentless and the communication never stops. You have to be sharp, you have to be vocal, and you have to be someone your crew can count on when things are flying.
Here's the standard we hold: every bowl, every plate, every to-go order that passes through your hands should be checked by you before it goes any further. Not because someone is watching - but because you take enough pride in this station that mistakes don't make it down the line on your watch. Your teammates are counting on you to be those final eyes, and you take that seriously.
This is one of the most team-dependent roles in our entire building. You rely on the people around you, and they rely on you right back. That's not a figure of speech here - it's the reality of every single service.
What You'll Do
  • Stage dine-in food dishes and bowls for servers with speed and accuracy - volume is high and timing matters
  • Manage curbside and online to-go orders simultaneously, building each one completely and correctly before it goes out the door
  • Hold multiple orders in your head at once and stay organized when everything is moving at full speed
  • Communicate constantly and precisely with kitchen stations and front-of-house staff to keep service flowing without backup
  • Be the last set of eyes on every order that leaves your station - own that standard
  • Use proper portioning techniques on every single order without exception
  • Maintain a clean and sanitized station throughout the shift - even when it's chaos, the station stays dialed in
