Ludico is an exciting new restaurant concept from Tribeca Hospitality Group, bringing together fresh, vibrant, and transportive European flavors in an elevated yet approachable dining experience.

We are seeking an experienced, innovative, and hospitality-driven Beverage Manager to join our opening leadership team. This hands-on leadership role is responsible for overseeing Ludico's beverage operations, including cocktails, spirits, beer, non-alcoholic beverages, inventory management, staff development, and exceptional bar service.

Working closely with the Head Sommelier, General Manager, Executive Chef, and restaurant leadership team, the Beverage Manager will help create an outstanding beverage program that complements Ludico's Coastal European cuisine while delivering exceptional guest experiences and driving beverage sales.

Position Summary

The Beverage Manager is responsible for the daily management of all beverage operations. This includes overseeing bar service, beverage inventory, ordering, receiving, cost controls, staff training, menu implementation, and operational excellence. This individual must be a visible leader who inspires the team while maintaining the highest standards of hospitality and professionalism.

Beverage Leadership & Operations

  • Oversee all daily beverage operations, ensuring exceptional quality, consistency, and execution.
  • Lead and support all bartenders and bar support staff during service.
  • Maintain high standards for cocktail preparation, presentation, and responsible alcohol service.
  • Collaborate with the Head Sommelier and Executive Chef to develop seasonal beverage pairings and specialty offerings.
  • Assist in developing signature cocktails, zero-proof beverages, and seasonal menus.
  • Ensure consistency across all beverage recipes and preparation standards.
  • Maintain proper bar setup, organization, cleanliness, and operational readiness.

Team Leadership & Development

  • Recruit, interview, onboard, train, coach, and develop bartenders and bar support staff.
  • Conduct pre-shift meetings and ongoing beverage education.
  • Foster a culture of hospitality, teamwork, accountability, and continuous improvement.
  • Conduct performance coaching and support employee development.
  • Lead by example with professionalism and exceptional guest service.

Inventory & Financial Management

  • Oversee beverage purchasing, receiving, inventory, and storage.
  • Build and maintain relationships with distributors and beverage vendors.
  • Monitor beverage costs, inventory levels, and product usage.
  • Maintain accurate inventory records and conduct regular inventory counts.
  • Ensure proper product rotation and minimize waste.
  • Assist in budgeting, forecasting, and beverage profitability initiatives.
  • Analyze beverage sales and identify opportunities to increase revenue.

Guest Experience

  • Maintain a visible presence in the dining room and bar throughout service.
  • Engage with guests and provide exceptional hospitality.
  • Resolve guest concerns promptly and professionally.
  • Support private dining events, wine dinners, and special beverage-focused experiences.
  • Promote beverage sales through thoughtful recommendations and personalized service.

Food Safety & Compliance

  • Ensure compliance with all New York State liquor laws and responsible alcohol service practices.
  • Maintain Department of Health sanitation standards throughout all bar areas.
  • Ensure proper handling, storage, and rotation of all beverage products.
  • Maintain a clean, organized, and safe bar environment.
  • Ensure compliance with company policies and operational procedures.

Qualifications

  • Minimum 3–5 years of beverage management experience in an upscale, high-volume, or fine dining restaurant.
  • Strong knowledge of wine, spirits, cocktails, beer, and non-alcoholic beverage programs.
  • Experience creating and implementing cocktail menus and beverage programs.
  • Strong understanding of inventory management, purchasing, beverage cost controls, and vendor relations.
  • Experience leading, coaching, and developing bar teams.
  • Knowledge of responsible alcohol service and New York State liquor regulations.
  • Experience with Toast POS and beverage inventory systems preferred.
  • Strong leadership, communication, and organizational skills.
  • Professional appearance and polished demeanor.
  • Ability to remain calm and effective in a fast-paced environment.
  • Flexible availability, including evenings, weekends, and holidays.

Physical Requirements

  • Ability to stand and walk for extended periods throughout the shift.
  • Ability to lift and carry up to 50 pounds, including cases of beer, wine, and spirits.
  • Must have the ability to frequently move throughout multiple levels of the restaurant, including going up and down stairs.
  • Ability to bend, reach, push, pull, and safely move beverage inventory throughout the restaurant.
