About the Main Kitchen

The Main Kitchen at Hyatt Regency Tamaya is the heart of our culinary operation, providing essential support to all resort dining outlets-including Corn Maiden, Rio Bar & Grill, Santa Ana Cafe, inroom dining, and seasonal venues.  In addition, the Main Kitchen oversees culinary preparation for banquets, weddings, meetings, and large-scale events, ensuring exceptional food quality for functions ranging from intimate gatherings to large corporate conferences. Our team takes pride in delivering consistent, high-quality cuisine that reflects the spirit, culture, and hospitality of Tamaya.

Position Summary

The Production Cook plays a vital role in preparing bulk ingredients, stock items, sauces, proteins, and specialty components used across all dining outlets. This position also supports banquet and event production, ensuring accuracy, efficiency, and consistency for high-volume service. The ideal candidate is organized, dependable, skilled in scratch preparation, and comfortable working in a fast-paced environment.

Essential Duties & Responsibilities

  • Prepare large-batch recipes, base ingredients, sauces, stocks, and mise en place to support all property outlets.
  • Assist in the preparation and execution of banquet and event menus, ensuring timely production and adherence to chef specifications. Follow standardized recipes to ensure consistency and accuracy across all dining venues.
  • Maintain organization of walk-in coolers, dry storage, prep areas, and equipment.
  • Ensure compliance with all food safety, sanitation, and HACCP practices.
  • Label, date, rotate, and properly store all prepared items.
  • Communicate effectively with outlet chefs to prioritize daily production and event timelines
  • Support plating and execution during banquet service as needed.
  • Maintain a positive, team-focused work environment and assist other kitchen staff as required.

  • 1-3 years of culinary experience preferred, ideally in production, banquet, or high-volume kitchen environments.
  • Strong knowledge of fundamental cooking techniques, food safety, and large-batch preparation.
  • Ability to follow recipes and production lists with accuracy and attention to detail.
  • Strong organizational skills and ability to manage multiple tasks at once.
  • Flexibility to work various shifts based on event and outlet needs 
  • Ability to stand for extended periods and lift up to 50 lbs.
  • Culinary education or formal training is a plus but not required.
