Location: Anchorage, AK
Job Type: Full-Time

Reporting to: General Manager (Executive Chef when in HOH)
Schedule: Nights, weekends, and holidays required

About the Role

We are seeking a dynamic and experienced Hybrid Restaurant Manager to lead both Front-of-House (FOH) operations and Heart-of-House (BOH) culinary execution in a high-end fine dining steakhouse environment.

This role is ideal for a passionate hospitality professional who thrives in an upscale setting known for premium steaks, refined service, and an exceptional wine program. You will play a critical role in delivering a seamless guest experience while maintaining the highest standards of culinary excellence, service etiquette, and operational performance.

Key Responsibilities

Culinary Leadership (Heart of House)

  • Lead by example on the line, ensuring precise execution of high-quality steakhouse dishes, including premium cuts, seafood, and scratch-made accompaniments.
  • Maintain exceptional standards of food quality, temperature control, presentation, and consistency.
  • Support the Executive Chef in overseeing all kitchen operations, including prep, service, inventory, ordering, and sanitation.
  • Enforce kitchen systems, standardized recipes, plating guides, and prep lists to ensure consistency and efficiency.
  • Train and develop line cooks in steakhouse techniques, including butchery basics, proper steak temperatures, and finishing methods.
  • Monitor food and labor costs, ensuring profitability without compromising quality.
  • Maintain strict adherence to food safety, cleanliness, and health regulations.
  • Act as kitchen leader in the absence of the Executive Chef.
  • Assist in the development of seasonal features, steakhouse specials, and private dining/event menus.

FOH & Guest Experience Leadership

  • Oversee daily Front-of-House operations, ensuring seamless collaboration with the kitchen for a polished, synchronized service.
  • Deliver an elevated fine dining experience aligned with steakhouse hospitality standards; professional, polished, and detail-driven.
  • Lead service during peak hours with composure, ensuring timing, pacing, and guest satisfaction are flawless.
  • Demonstrate expert knowledge of premium beef cuts, wine pairings, and spirits, guiding both staff and guests.
  • Proactively manage guest feedback and service recovery to build loyalty and exceed expectations.
  • Train, coach, and develop FOH team members in fine dining service etiquette, including tableside presentation and wine service.
  • Create memorable guest experiences centered around hospitality, product knowledge, and attention to detail.

Operations, Business & Team Development

  • Recruit, hire, train, and schedule FOH staff with a focus on professionalism and hospitality excellence.
  • Foster a team culture centered around accountability, respect, and continuous improvement.
  • Ensure compliance with all sanitation, health, and safety regulations.
  • Analyze performance metrics, including labor, food cost, and sales, to support profitability and budgeting goals.
  • Uphold and strengthen the steakhouse brand within the local community.
  • Drive revenue through private dining, events, wine dinners, and local marketing initiatives.

Qualifications & Skills

Required Experience

  • 3+ years of management experience in a fine dining or upscale steakhouse environment.
  • 3+ years of BOH leadership experience as a Sous Chef or higher in a scratch kitchen.

Core Competencies

  • Strong knowledge of steakhouse cuisine, including premium cuts, cooking temperatures, and classic accompaniments.
  • Expertise in wine, spirits, and food pairings, especially within a steakhouse concept.
  • Proven leadership skills with the ability to inspire, coach, and develop both FOH and BOH teams.
  • Exceptional guest service skills with experience in service recovery and relationship building.
  • Strong organizational, time-management, and problem-solving abilities.
  • Proficiency in POS systems, staff scheduling, and financial reporting.
