Position Summary:
The Salad Manager is responsible for assisting in the oversight of the entire Salad amp; Juice Departments, including programs and personnel. This position requires the production of high quality fresh recipes and their merchandising; the maintenance of the highest food safety and cleanliness standards; and achieving weekly labor budget, profit margin, and waste control guidelines as established by the Culinary Team managers. This is a supervisory position with hiring and firing responsibilities.
Essential Duties amp; Responsibilities:
  • Manage and maintain a skilled kitchen staff.
  • Assist in the recruitment and selection of qualified individuals for department staffing needs.
  • Prioritize and delegate daily, weekly, and monthly tasks to staff as appropriate.
  • Instruct staff in proper food amp; juice preparation techniques; proper food storage guidelines; proper sanitation and safety regulations; and proper and safe operation of all kitchen equipment and utensils, salad bar, juice machine, and coolers.
  • Ensure that staff understands daily expectations, performance goals, and production goals.
  • Assist in the development and accurate preparation of Salad, Juice, Cut Fruit amp; Vegetable, and Catering recipes.
  • Order products and supplies as assigned.
  • Receive and check orders, submit invoice,s and manage credits/returns.
  • Ensure product is at the correct price point for department margin goals.
  • Budget Department labor for a labor target, as directed by Upper Management, and schedule employees according to department needs.
  • Ensure products are well merchandised, stocked, and rotated.
  • Maintain a sanitary and organized kitchen production area, according to all governing codes, guidelines and regulations.
  • Maintain appropriate inventory levels.
  • Coordinate appropriate signage for products.
  • Coordinate product with Marketing Coordinator for demo and sampling.
  • Coordinate with Upper Management to make supply and service requests as needed.
  • Manage vendor relationships in a professional manner.
  • Attend local food shows as requested by Upper Management and place purchase orders for products on show deals.
  • Execute personnel scheduling to maximize productivity.
  • Participate in Department and Manager meetings.
  • Maintain regular, predictable, and punctual attendance for scheduled shifts.
Other Duties amp; Responsibilities:
  • Answer department phone calls and take messages.
  • Assist customers in all departments as needed.
  • Follow-up on customer requests as delegated.
