Job description

Paloma Scratch Kitchen is the on-site culinary destination at The Wayback - a fun, flavor-forward restaurant that brings the same vibrant, eclectic energy as the hotel itself. As Restaurant Lead, you are the connective tissue between the front of house team and kitchen - ensuring servers, bartenders, and hosts are delivering consistent, professional, and memorable service on every shift. Working closely with the Restaurant Manager, you will play a hands-on role in training, team development, and daily operations, stepping in to lead when needed and setting the standard for service excellence across the floor.


What You'll Do

Guest Experience & Service Standards

  • Ensure all front of house staff deliver efficient, professional, and courteous service that meets or exceeds guest expectations
  • Maximize the guest experience through consistent quality of service and product
  • Resolve guest complaints promptly and professionally when they arise
  • Ensure correct event setups and booking arrangements are executed for each shift
  • Maintain guest privacy and discretion at all times

Operations & Standards

  • Assist the Restaurant Manager with overall front of house operations while maintaining quality standards and maximizing food and beverage profitability
  • Serve as liaison between front of house and kitchen staff to ensure timely communication and proper order timing
  • Operate the POS system and maintain security of the system at all times
  • Follow correct cash management procedures
  • Assist in maintaining inventory levels that minimize waste while keeping the restaurant fully stocked and guest-ready
  • Ensure all front of house staff adhere to AATMOS Hospitality codes of conduct and standard operating procedures
  • Monitor staff breaks and timekeeping throughout each shift
  • Assume the full role and responsibilities of the Restaurant Manager in their absence
  • Perform and train in all duties across host, bartender, and server positions as needed

Team Leadership & Development

  • Work closely with the Restaurant Manager on training new staff, shift lineups, and associate development
  • Conduct daily service briefings and ongoing food and beverage training sessions
  • Encourage and motivate the team with a positive, energetic attitude that reflects The Wayback's personality
  • Lead the team efficiently and effectively, solving problems independently when they arise
