Job description

Pinkbox Doughnuts isn't your old-school bakery - we're the bold, colorful, made-from-scratch doughnut headquarters serving up 70+ Insta-worthy flavors daily, including icons like Pinky & Pooh. Our signature coffee menu is always rotating too, because we like to keep things fresh, fun, and never boring.
With 14 locations across Las Vegas & St. George, Utah, plus Salt Lake City it's no surprise we've been voted "Best Doughnuts in Vegas" year after year. Tourists flock, locals stay loyal, and our doughnuts keep going viral for a reason.
Pinkbox Doughnuts is a fast-growing, multi-state brand with a clear roadmap toward national expansion. We are seeking an experienced Pastry Chef to lead scratch-based product development, decoration standards, and production consistency across our commissary and retail locations.
This role focuses on scratch-made fillings, glazes, icings, frostings, and decorative execution at scale. Donut production experience is preferred but not required. Strong pastry fundamentals are essential.
Essential Responsibilities
Product Development
  • Develop and refine scratch-made fillings, glazes, icings, frostings, and toppings
  • Adapt classic and modern pastry techniques into donut applications
  • Support seasonal and limited-time product launches
  • Maintain visual and flavor consistency across all locations

Production & Quality
  • Establish and enforce SOPs for filling, glazing, decorating, finishing, and storage
  • Scale recipes while maintaining quality, texture, and appearance
  • Conduct tastings, audits, and quality checks at commissary and store levels
  • Partner with suppliers to standardize ingredients

Leadership & Training
  • Train commissary and shop-level teams on pastry execution and decoration
  • Develop training materials and rollout documentation
  • Serve as the pastry subject-matter expert across all current markets

Costing & Operations
  • Cost all recipes, including fillings, glazes, icings, frostings, and decorative components
  • Track ingredient yield, batch scaling, waste, and margin impact
  • Partner with operations and supply chain to support efficient production
  • Support new store openings with training and product readiness

Required Qualifications
  • Minimum 5 years experience as a Pastry Chef, Head Baker, or senior pastry leader in a commercial, retail, hotel, or R&D environment
  • Expert skill in scratch pastry production and decoration
  • Proven experience costing recipes, including yield and waste considerations
  • Experience scaling recipes for high-volume production
  • Strong leadership, training, and communication skills
  • Knowledge of food safety and sanitation standards

Preferred Qualifications
  • Donut production experience
  • Multi-unit or multi-location operational support
  • Culinary or Pastry degree/certification

Compensation & Benefits
  • Highly competitive salary based on experience and scope
  • Performance-based bonus potential tied to execution, cost control, and launches
  • Comprehensive benefits package, including health benefits and paid time off
