Job description

Radio Bakery Sous Chef will be responsible for supporting the Bakery Chef and managing the team to ensure the BOH operations are done to the highest standard. They are also responsible for overseeing counter service and understanding the operation of the bakery as a whole. The Sous Chef primarily reports to one location but supports bakery operations at multiple locations depending on the needs of the business.


Reports to: Bakery Chef and Ownership Team

Direct Reports: Servers, Bakers, Prep Cooks, Porters

Key Relationships: Bakery Chef and General Manager

FLSA Classification: Exempt

Responsibilities:

Operations

  • Opens and/or closes the bakery per Radio Bakery’s standards
  • Manages the team in their daily responsibilities and provides clear, effective direction
  • Performs all POS functions, including comps, voids and transfers
  • Ensures the bakery is set up for success and side work is continually being monitored and completed.
  • Ensures Radio Bakery’s steps of service are met for every guest
  • Work Counter with team as necessary
  • Trash management
  • Pest Control
  • Kitchen Repairs & Maintenance
  • Ordering & Inventory: Food, Smallwares, disposables
  • Upholds our high standards for daily baking and food production

Menu Knowledge 

  • Keeps current with Radio Bakery menu and can describe all items
  • Understands different types of allergy restrictions and is able to guide guests through the menu seamlessly
  • Learns and understands the cooking techniques and processes used in the bakery

Compliance

  • Actively strives to ensure that Radio Bakery remains compliant with all local, state and federal employment laws and Department of Health standards
  • Supports the onboarding process to ensure the completion and compliance of all related documentation

People Practices

  • Remains up to date and compliant with Radio Bakery HR practices and company policies
  • Resolves staffing issues with callouts and replacements in a timely manner, according to our policies
  • Acts as a role model and provides continuous constructive feedback and guidance to the team; continuously coaches team and creates opportunities for improvement
  • Fairly and consistently executes corrective action with team members when necessary and in compliance with Radio Bakery’s HR practices

Communication

  • Actively cultivates and maintains strong, caring relationships with guests, vendors, and neighboring businesses
  • Along with Pastry Chef and ownership team, regularly communicates relevant Radio Bakery news and initiatives with the team

Training

  • Ensures team is completely trained and knowledgeable in all aspects of service
  • Holds team accountable for effectively completing their position’s specific job responsibilities according to Radio Bakery standards
  • Educates team on all aspects of food and beverage, daily and through continuing education
  • Communicates daily menu changes to the FOH team

Cash Responsibility 

  • Strictly follows general business guidelines for cash handling 
  • Carefully detects counterfeit tender with provided materials

Qualifications:

2+ years of management experience in a bakery or restaurant

Fluent in in both written and spoken English

Excellent verbal and written communication skills

Proficient with POS Systems, Microsoft Office Suite (Excel, Word, Outlook, Power Point)

Demonstrates leadership characteristics, which inspire team members to meet and exceed standards

Approaches projects with multi-tasking, problem solving, attention to detail, critical thinking and receiving delegation

Takes initiative and follows through

Ability to work nights, weekends and holidays, and variable schedule per the needs of the business

Education:

Preferred Bachelor’s Degree or Certification in Hospitality-related field or equivalent expertise gained on the job

Holds NY Department of Health & Mental Hygiene Food Protection Certificate

Physical:

Ability to stand for extended periods of time

Ability to bend/climb stairs as necessary

Ability to lift/push 50+ lbs.

Meets grooming standards as outlined by employee guidelines

Ability to perform essential job responsibilities and maintain professionalism under pressure

Attends mandatory meetings, including team meetings, leadership meetings, etc.
