Job description

Marshall Yards Racing & Gaming is a newly constructed facility in a high-traffic area in Calvert City, Kentucky at the intersection of I-69 and I-24. The Property will feature nearly 240 state-of-the-art historical racing machines ("HRMs"), a sports bar and a retail sportsbook, simulcast wagering, and food and beverage offerings. The Assistant General Manager will be responsible for leading the successful overall direction, administration, and coordination of all operating activities of Marshall Yards Racing & Gaming including Pre-opening activities, culture creation, staffing, compliance with all regulatory requirements, and the ongoing operations of historical racing machine operations, gaming operations, simulcast operations, sportsbook operations, and entertainment operations.

JOB SUMMARY

The Prep Cook is responsible for prepping food items before shift safely, following menu specifications and standard recipes, to assist in serving guests.

ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Ability to operate kitchen equipment, including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and griddles.
  • Actively coordinates with staff to prep items needed in a timely and effective manner.
  • Requires reading and math skills for recipes and measurements.
  • Ability to read, write, speak, and understand Basic English to read recipes and communicate with other team members.
  • Adheres to control procedures for food costs and quality.
  • Actively encourages and abides by all health codes and hand-washing guidelines.
  • Prepares all food items according to standard recipes and menu to ensure consistency of product to the guest.
  • Be able to create compound sauces and derivatives of the mother sauces.
  • Meticulously clean all food preparation areas and kitchen equipment to ensure a healthy and clean environment for all Food and Beverage team members.
  • Other duties as assigned.
REQUIRED SKILLS AND ABILITIES
  • Maintaining interpersonal working relationships among all personnel.
  • Oral and written communication skills.
  • Able to interact with internal and external guests in a friendly/fast manner.
  • All internal and external guests must be treated in a manner to ensure complete satisfaction. Always strive to exceed our guests' expectations.
  • Ability to work in a fast-paced environment.
  • Must be able to work an alternate schedule with a minimum of two (2) weeks' notice.
EDUCATION AND EXPERIENCE
  • Must have a high school diploma or equivalent.
  • At least 1 year of experience in a professional kitchen area is preferred.
  • Food safe certification from a recognized authority (ServSafe certification, etc.) is preferred.
  • Able to obtain and maintain a valid Kentucky gaming/racing license.
