Job description

Meat Processing Lead has the ability to trim all fresh and frozen box meats to use meat grinders, slicers, knives, saws, and other tools. It will be also required to cut meat to meet store’s specifications. The position is required to reduce the chance of any spoilage of meat to reduce waste and loss of profits.

Receiving

  • Make exact quantity and quality of items delivered
  • Receive & unload shipment of meat products and in to the freezer/cooler


Butchering & Preparing

  • Assemble and utilize machines in an operative state while observing safety requirements
  • Utilize ground machine for ground meat
  • Utilizing vacuum tumbler to produce marinated meat
  • Utilize band saw machines to cut frozen bones
  • Utilize machines for frozen meat(PUMA) to produce frozen products
  • Utilize wrapping and packing equipment and convey all prepped items for pick up/delivery
  • Trim/slice all meat into appropriate cuts
  • Prepare sauces for marinated meat & produce different marinated meat
  • Utilize band saw machines to cut frozen bones and beef short ribs
  • Utilizing in industrial grade equipment and other manual devices in order to prepare meat
  • Responsible of butchering meat by knife to prepare different cuts and texture
  • Procuring a skill set with knives to handle high quality meat
  • Inspect and check inventory of meat and supply
  • Rotate products to reduce the chance of any spoilage of meat to reduce waste and loss of profit

Cleaning

  • Maintain a clean and sterile workspace
  • Disassemble and clean all machines
