Overnight Kitchen Manager (10:00pm-8:00am)

Massapequa, NY

Ourstore located in Massapequa is seeking a FT Kitchen Manager (overnight hours of 10pm-8:00am) for its very busy kitchen operations! This newly crafted position as Overnight Kitchen Manager will supervise kitchen duties by managing the pantry, inventory, controlling how food is stored and prepared. This individual will supervise a team of Overnight Kitchen Clerks and Grab and Go Clerks.

Responsibilities

  • Ensuring that all food items and products are stored, prepared and served based on the restaurant's recipe, preparation and portion standards
  • Evaluating and disciplining kitchen personnel accordingly and making employment and termination decisions
  • Ordering kitchen materials and ingredients based on the menu and market demand
  • Supervising food preparation in the kitchen and ensuring that customers are satisfied
  • Maintaining clean working environments and making sure that employees follow the restaurant's preventive maintenance measures
  • Maintaining adequate inventory levels and conducting weekly inventories
  • Working with various department managers to create menu items, pricing and establishing portion sizes of each meal
  • Scheduling shifts by business hours, days, and occasions
  • Overseeing the training of employees to ensure the safe operation of kitchen equipment and utensils and the proper handling of heavy items and hazardous materials.
  • Other duties and functions as assigned

Food Safety

  • Oversee the quality food, oversee inventory, supply, and QA processes in the restaurant.
  • Ensure that food safety and security standards are met and adhered to consistently by team members
  • Store food products in compliance with safety practices (e.g., in refrigerators, storage room, etc.)
  • Manage and maintain food safety standards at all times

Requirements

  • HS Diploma or equivalent; a Culinary Degree/training is preferrable
  • 5-7 years of experience managing a kitchen in a fast paced kitchen
  • Ability to work a varying schedule including nights/weekends/holidays
  • Must be self motivated with the ability to motivate and lead a team
  • Must be able to speak, read and understand the English language
  • Excellent verbal, written, and communication skills
  • Food Safety Certification

Working Conditions

  • Most of the time is spent moving about continuously on hard surfaces. There may be a need to frequently position oneself to examine and/or scan merchandise, including bending, climbing, crawling, handling, pulling, reaching, and stooping.
  • May require lifting objects up to 30 pounds. May require lifting and moving heavy and/or awkward objects more than 30 pounds with assistance.
  • Usually in a comfortable indoor environment surrounded by moving machinery and/or loud equipment that may require shouting in order to be heard. There could be exposure to temperature extremes from freezers, ovens, and/or coolers.
  • There may be occasional exposure to cleaning agents, sharp objects/industrial equipment necessary to perform job duties and functions.
