THE ROLE
The Overnight Bakery Supervisor supports overnight production operations by leading a team through all aspects of bread, pastry, viennoiserie, and retail cookie production. This role helps ensure products are produced safely, efficiently, and to Tatte's quality standards while maintaining a clean, organized, and food-safe environment.
Working closely with the Overnight Bakery Management Team, the Overnight Bakery Supervisor helps direct overnight production, supports team development, monitors product quality, and ensures production goals are achieved. Successful candidates thrive in fast-paced production environments, lead by example, and are passionate about craftsmanship, quality, and team success.
KEY RESPONSIBILITIES
  • Partner with the Overnight Bakery Management Team to maintain quality standards for bread, pastry, viennoiserie, and retail cookie production
  • Assist with staffing, onboarding, training, and development of bakery team members
  • Support labor management and waste reduction initiatives
  • Stage and organize overnight production to ensure efficient execution and successful shift outcomes
  • Manage production floor activities, delegate tasks, and ensure production goals are met
  • Support packaging operations for morning deliveries as needed
  • Maintain effective relationships with bakery managers and team members across departments
  • Ensure compliance with food safety, sanitation, cleanliness, GMP, and government regulations
  • Assist with directing and managing overnight production shifts
  • Provide clear and constructive feedback to team members regarding performance and development
  • Support and model Tatte's mission, values, and company policies
  • Other duties as assigned

ESSENTIAL FUNCTIONS / WORKING CONDITIONS
  • Ability to stand for up to 10 hours per shift
  • Ability to kneel, crawl, grasp, reach overhead, push, lift, manipulate, and carry up to 50 pounds
  • Availability to work overnight shifts, including weekends and holidays as needed

QUALIFICATIONS & EXPERIENCE
Required
  • Minimum 1 year of baking experience in an artisan bakery, scratch bakery, high-volume pastry production facility, banquet production kitchen, or similar environment
  • Experience operating commercial bakery equipment including mixers, proofers, sheeters, ovens, and related equipment
  • Strong communication and teamwork skills
  • Ability to read and speak basic English
  • Positive attitude and willingness to learn
  • Weekend availability
  • Consistent and punctual attendance
  • Basic computer skills

Preferred
  • Prior supervisory experience
  • AIB or Culinary School certification in Baking
  • ServSafe certification
  • Experience leading high-performing teams
