We are seeking an experienced and hands-on Overnight Bakery Manager to lead overnight bakery operations, oversee production teams, and ensure the highest quality standards for our restaurants, retail locations, and catering operations.

Position Summary

The Overnight Bakery Manager is responsible for leading overnight production operations, ensuring timely preparation of breads, pastries, and baked goods, and supervising bakery staff to meet daily production goals. This role combines hands-on bakery leadership with team management, quality control, inventory oversight, scheduling support, and operational excellence. The ideal candidate thrives in a fast-paced production environment, leads by example, and maintains a strong commitment to quality, food safety, and employee development.

Essential Duties amp; ResponsibilitiesLeadership amp; Team Management
  • Lead, coach, and supervise overnight bakery employees, including team leads and production staff.
  • Train, onboard, and develop new team members to ensure consistency in production standards and procedures.
  • Foster a positive, respectful, and accountable team culture.
  • Participate in employee interviews, hiring, and onboarding activities as assigned.
  • Assist with employee scheduling and labor planning to support production needs.
  • Serve as a role model for professionalism, teamwork, and company values.
Bakery Production amp; Quality Control
  • Oversee the production and presentation of artisan breads, pastries, desserts, and specialty baked goods.
  • Ensure all products meet established quality, consistency, and presentation standards.
  • Monitor production timelines to ensure products are completed and ready for transportation and distribution on schedule.
  • Continuously assess production processes and identify opportunities for efficiency improvements.
  • Maintain rigorous quality control standards to support customer satisfaction and brand reputation.
Operations amp; Inventory Management
  • Monitor inventory levels and coordinate ordering of bakery ingredients, supplies, and packaging materials.
  • Maintain accurate production records, logs, and operational documentation.
  • Review operational communications, invoices, production schedules, BEOs, emails, and related documents in a timely manner.
  • Collaborate with restaurant and retail leadership teams to ensure seamless communication and product fulfillment.
  • Support implementation of bakery procedures, systems, and best practices.
Food Safety amp; Compliance
  • Ensure compliance with all food safety, sanitation, health, and workplace safety regulations.
  • Maintain a clean, organized, and safe production environment.
  • Promote and enforce company policies and operational standards.
  • Conduct routine inspections to ensure cleanliness and adherence to food handling procedures.
QualificationsRequired Qualifications
  • High school diploma or equivalent required; culinary, baking, pastry, or related education preferred.
  • Manager Food Handler Certification required or ability to obtain upon hire.
  • Minimum of 3 years of bakery, pastry, or food production experience.
  • Minimum of 2 years of leadership or supervisory experience in a bakery, food production, hospitality, or restaurant environment.
  • Proven experience training and developing team members.
  • Strong organizational, communication, and problem-solving skills.
  • Ability to work effectively in a fast-paced, high-volume production environment.
  • Strong attention to detail and commitment to quality.
  • Proficiency with Microsoft 365 and business software systems.
  • Experience with Restaurant365 and Toast preferred.
  • Flexible availability, including overnight, weekend, holiday, and extended shifts as needed.
Preferred Qualifications
  • Professional baking or pastry experience in a large-scale production bakery.
  • Experience managing inventory, labor, and production scheduling.
  • Bilingual English/Spanish communication skills are a plus.
Physical Requirements
  • Ability to stand and walk for extended periods throughout the shift.
  • Frequently required to bend, kneel, reach, push, pull, and lift.
  • Ability to lift and carry up to 50 pounds regularly.
  • Ability to work in varying temperatures, including freezer, refrigerator, and hot production environments.
  • Ability to safely operate bakery equipment and tools.
Work Environment
