What are the key skills and qualifications needed to thrive as an Online Nutrition Professor, and why are they important?

To thrive as an Online Nutrition Professor, you need an advanced degree in nutrition or dietetics, teaching experience, and a solid grasp of current nutritional science. Familiarity with learning management systems (LMS), virtual classroom tools, and online assessment platforms is typically required. Strong communication, digital engagement, and organizational skills help create an interactive and supportive learning environment. These skills ensure students receive accurate, accessible education and remain engaged in a virtual setting.

How do Online Nutrition Professors typically engage and support students in a virtual classroom setting?

Online Nutrition Professors often utilize a blend of live video lectures, discussion forums, and interactive assignments to foster student engagement. They provide timely feedback on assessments, host virtual office hours, and use digital tools to facilitate group projects or case studies. Building a sense of community can be challenging online, so professors may implement regular check-ins and encourage peer-to-peer interactions. Staying adaptable with technology and responsive to student needs is key to supporting successful learning outcomes.

Responsibilities
• Deliver high-quality instruction in nutrition and dietetics courses at both the undergraduate and, where qualifications are appropriate, at the graduate level
• Advise and mentor students across academic programs, as with advising individual students and potentially student clubs, as with the Student Dietetic Association (SDA)
• Contribute to curriculum development and program accreditation activities, for example as in overseeing the Nutrition minor and other curricular needs

• Meet the other responsibilities and expectations of Cedar Crest College faculty members outlined in the Faculty Handbook
• Oversee the Nutrition Minor

Credentials
• Registered Dietitian Nutritionist (RDN)
Experience
• Minimum of five (5) years credentialed as an RDN
• Prior teaching experience, preferred, although the Department invites experienced nutrition practitioners interested beginning in education; the commitment to become an effective educator of our students is required
• Teaching experience in an ACEND-accredited dietetics program preferred
Specialization
• Generalist with demonstrated expertise in community nutrition and health promotion
Teaching
• Demonstrated ability to teach undergraduate, Dietetic Internship (DI), and graduate-level courses
• Evidence of effectiveness in online and HyFlex instruction, including innovative, high-impact teaching practices that support student engagement and learning outcomes across modalities
