Description
SUMMARY:
Cleans kitchen area using proper chemicals and cleaning agents to manufacturer's guidelines. Maintains kitchen work areas and restaurant equipment and utensils in a clean and organized fashion. Maintain kitchen floors, drains, walls, worktables, equipment, sinks and ceilings clean and in good condition. Stores incoming food products in proper storage areas using proper rotations. Assists dishwashers with daily duties.
ESSENTIAL SKILLS, DUTIES & RESPONSIBILITIES:
  • Sweeps and mops kitchen floors and cleans floor mats.
  • Washes worktables, walls, and refrigerators.
  • Cleans ovens, stoves, deep fryers, and other institutional equipment to ensure sanitation.
  • Segregates and removes trash and garbage and places it in designated containers.
  • Steam cleans or hoses out garbage cans.
  • Washes pots, pans, and trays.
  • Organizes and maintains chemical storeroom and stewarding equipment.
  • Uses protective gear while performing duties. i.e., gloves, goggles, aprons, boots, back brace, and masks to ensure self-safety.
  • Clean ceiling and/or ceiling tiles, with use of ladder in a safe manner.
  • Perform any general cleaning tasks using authorized, institutional labeled cleaning products as assigned to adhere to health and safety standards.
  • Transfers supplies and equipment between storage and work areas.
  • Loads or unloads trucks picking up or delivering supplies and food. Rotates incoming food products and organizing them in walk-in refrigerators, freezers, and dry storage room, including all produce, dairy, meats, poultry, seafood, dry goods, frozen foods, paper goods, and chemicals.
  • Attend training, safety, pre-shift, and departmental meetings as scheduled.
  • Assists in the training and supporting of new employees.
  • To perform this job successfully, an individual must be able to perform each duty satisfactorily.
  • Performs miscellaneous duties as required.

MINIMUM QUALIFICATIONS:
  • No prior experience required. Prior restaurant experience preferred.
  • Chemical safety awareness.
  • Ability to read chemical directions and warnings for their proper use.
  • Ability to read and understand any caution or safety notices.
  • Have through knowledge of all institutional kitchen equipment and their proper use and care.

  • Ability to work in a fast-paced environment.

EDUCATION:
  • High School diploma or GED (preferred)

LICENSE REQUIREMENTS:
Must be able to successfully pass a pre-employment drug screen, background investigation, and maintain a Pauma Gaming Commission License.
PHYSICAL/MENTAL REQUIREMENTS: (*Constantly, Frequently, Occasionally)
  • Ability to lift to 50+ pounds occasionally and 30 pounds repetitively.
  • Ability to stand during entire shift.
  • Constantly walking and standing.
  • Constant hearing, seeing, and talking.
  • Constantly balancing, bending, reaching, twisting, holding, wrist motion, and stooping.

WORKING CONDITIONS:
  • Work is performed indoors in a climate-controlled environment.
  • Close spaces while working with others.
  • Excessive noise, lights, and smoke.
  • Will be exposed to a variety of chemicals and other irritants.
