Description
JOB PURPOSE:
Prepares retail and customer cuts of meat for sale at the assigned location.
KNOWLEDGE AND EXPERIENCE:
• Knowledge of food retail meat marketing practices is required.
• Strong analytical skills are necessary in order to maintain inventory and to use sales and customer data to improve sales and margins.
• Good planning skills are required.
• Budget management experience is strongly preferred.
• Thorough knowledge of the preparation of all meats and fish for the retail market, including selection, types of cuts, trimming, grinding, storage and preparation.
• Thorough knowledge of safe handling and storage procedures to ensure the safety and quality of the store's meat and fish products.
• Excellent interpersonal and communication skills.
• Strong customer service orientation.
• Experience working with purveyors and inspecting new meat purchases.
• The ability to work in commercial refrigerators and freezers.
• The ability to safely handle all necessary cutting tools.
MAJOR DUTIES & RESPONSIBILITIES:
Inventory Management: Collaborates with the Meat Manager to plan product mix, select inventory, including types and quantities which are appropriate for changes in retail activity such as holidays or seasonal changes in business. Qualifies and maintains effective working relationships with purveyors. Rotates stock to ensure product freshness.
Product Development and Management: Develops and updates menus for catering, meals and carry-out specials, ensuring pricing is competitive and quality meets the company's standards. Develops new products, documents recipes to ensure standardization, and works with the Meat Manager to promote these categories. Cuts and trims meat to size for display or as ordered by a customer, using hand tools and power equipment, such as grinder, cubing machine, and power saw. Ensures meats are displayed attractively and packaged appropriately.
Customer Service: Receives requests or orders for specific cuts of meat. Provides information to customers on availability of specific cuts, how to prepare or cook chops or roasts. Provides advice on special orders such as deli trays or catering needs.
Hygiene: Ensures refrigerators and freezers are clean and safe temperatures are maintained at all times. Ensures area is prepared for planned or unplanned inspections and maintains a good working relationship with external inspectors. Follows all safety standards and rules.
PHYSICAL AND ENVIRONMENTAL CONDITIONS:
• Work is performed in a convenience store deli environment, and will also be performed outdoors on occasion. Work will be performed inside walk-in coolers.
• Frequent manual hand and finger dexterity work.
• Lift up to approximately 50 pounds, stoop, bend, reach, and continuously walk or remain in a standing position for extended periods.
• Work with meat cutting tools.
• Occasionally ascend and descend a five-foot step ladder.
• Reading alpha-numeric data on cash registers, electronic devices and documents.
