Job description

Job Title: Banquet Cook (Union Position GRIWA)

Location: Long Island Marriott Hotel & Conference Center Uniondale, NY
Department: Culinary / Food & Beverage
Reports To: Executive Chef

Position Overview

The Banquet Cook is responsible for preparing and executing high-quality food production for banquet and catering events at the Long Island Marriott. This role supports a high-volume conference and events operation, ensuring all food is prepared, presented, and delivered in accordance with Marriott brand standards, established recipes, and event timelines.

This position is covered under the GRIWA collective bargaining agreement, and all terms and conditions of employment, including wages, scheduling, and benefits, are governed accordingly.

Key Responsibilities Food Production & Quality
  • Prepare and cook banquet menu items according to standardized recipes and Executive Chef direction
  • Execute high-volume food production while maintaining consistency, quality, and presentation standards
  • Ensure proper portioning and plating for large-scale events, including weddings, conferences, and social functions
  • Assist in banquet kitchen setup, execution, and breakdown
Event Execution & Timing
  • Review and follow Banquet Event Orders (BEOs) to ensure accuracy in preparation and service
  • Work collaboratively with the culinary and banquet teams to meet strict service timelines
  • Adjust production as needed based on guest counts and event flow
Food Safety & Sanitation
  • Maintain compliance with all health, safety, and sanitation standards (Marriott and local regulations)
  • Ensure proper food handling, storage, labeling, and temperature controls
  • Keep workstations clean, organized, and inspection-ready at all times
Teamwork & Communication
  • Communicate effectively with the Executive Chef, Sous Chefs, and banquet service team
  • Support team members to ensure seamless event execution
  • Maintain a professional and respectful work environment in line with Marriott standards
Qualifications
  • Previous experience in a hotel, banquet, or high-volume kitchen preferred
  • Ability to work efficiently in a fast-paced, high-pressure environment
  • Strong understanding of food preparation techniques and kitchen operations
  • Flexible availability, including evenings, weekends, and holidays
  • Ability to stand for extended periods and lift up to 50 lbs

  • This position is represented by a collective bargaining agreement (GRIWA)
  • Wages, benefits, and working conditions are governed by the union contract
