The Restaurant Manager for Delilah at Wynn Las Vegas is responsible for leading daily operations within a high-profile, luxury dining and entertainment venue. This role ensures seamless execution of service, exceptional guest experiences, and alignment with Wynn's Forbes Five-Star standards.

Delilah operates as a modern-day supper club, blending fine dining, live entertainment, and nightlife energy. The Restaurant Manager must deliver elevated hospitality while managing a dynamic environment that includes VIP clientele, high-volume service periods, and entertainment-driven dining.

Key Responsibilities

Operational Leadership

  • Oversee all front-of-house operations, ensuring seamless service flow across dining, lounge, and entertainment components
  • Manage opening, operating, and closing procedures to ensure readiness and adherence to Wynn standards
  • Monitor dining room pacing, table turns, and guest flow to maximize both experience and revenue
  • Ensure all environmental elements (lighting, music, temperature, presentation) align with the Delilah brand experience

Guest Experience & VIP Service

  • Deliver highly personalized service aligned with Wynn's luxury hospitality standards
  • Engage and interact with VIP guests, ensuring expectations are anticipated and exceeded
  • Resolve guest concerns immediately, implementing service recovery strategies when needed
  • Collaborate with VIP Services, Nightlife, and Casino Marketing teams to enhance guest experiences

Team Leadership & Development

  • Recruit, train, mentor, and supervise FOH team members including servers, hosts, and support staff
  • Conduct pre-shift meetings to communicate VIPs, events, entertainment schedules, and service priorities
  • Foster a high-performance culture that promotes professionalism, accountability, and collaboration
  • Provide coaching, performance evaluations, and corrective action when required

Financial & Business Management

  • Drive revenue through optimized seating strategies, upselling, and premium guest experiences
  • Monitor labor, scheduling, and productivity to meet financial targets
  • Control inventory and purchasing, ensuring alignment with cost objectives
  • Analyze business trends, guest feedback, and performance metrics to improve operations

Entertainment & Event Integration

  • Coordinate closely with entertainment, nightlife, and event teams to execute nightly programming
  • Ensure smooth transitions between dining, live performances, and late-night atmosphere
  • Support private events, special activations, and high-profile bookings

Compliance & Brand Standards

  • Ensure adherence to all health, safety, and sanitation regulations
  • Maintain compliance with company policies and Nevada regulatory requirements
  • Uphold Wynn grooming, uniform, and presentation standards across all team members
  • Act as an ambassador of the Wynn brand and Delilah concept
Qualifications

Education & Experience

  • High school diploma or equivalent required; degree in Hospitality or related field preferred
  • 2+ years of management experience in fine dining, luxury hospitality, or nightlife-driven restaurants
  • Experience in high-volume, VIP-driven environments preferred

Knowledge & Skills

  • Strong understanding of fine dining service standards and luxury guest experience
  • Ability to manage both restaurant and nightlife-style operations within a single venue
  • Proven leadership and team development capabilities
  • Strong financial acumen, including labor and cost control
  • Excellent communication, problem-solving, and organizational skills

Licenses & Certifications

  • Must be able to obtain and maintain all required work cards and gaming licenses
