What are lox?

Lox refers to a fillet of brined salmon that is commonly served in thin slices, often on a bagel with cream cheese, onions, capers, and tomatoes. The term 'lox' originates from the Yiddish word for salmon and has become a staple in Jewish delicatessens, particularly in the United States. Traditional lox is made from the belly of the salmon and is cured in a salt brine, not smoked, which distinguishes it from smoked salmon or gravlax. Lox is prized for its silky texture and salty flavor, making it a popular choice for breakfast and brunch dishes.
