About Us

Located in West Town, Pastry Chef Aya Fukai has opened her own bakery, Aya Pastry, which utilizes her extensive pastry experience to showcase artisan breads and whimsical cakes and pastries. The mission at Aya Pastry is to support Chicago chefs and business owners by providing an extensive bread and pastry program whose quality is unmatched by other bakeries.

During her tenure at Maple amp; Ash, Aya was nominated in 2017 for James Beard Outstanding Pastry Chef and won Eater’s National Pastry Chef of the Year in 2016. In Chicago, Aya as the Executive Pastry Chef, cultivated the bread and pastry program for the two-Michelin starred restaurants, Sixteen at Trump and Ria at the former Elysian hotel. The management team at Aya Pastry shares Aya’s impressive background and experience in fine dining and upscale hotels.

Responsibilities
  • Daily production for all dessert items; including but not limited to plated dessert components, cakes, and pastries.
  • Ability to follow directions and recipes.
  • Assist in kitchen organization and cleanliness.
  • Daily check of pars and quality.
  • Fulfill orders for delivery given by pastry sous chef or executive pastry chef.
  • Delivery check-ins.
  • Attend certain outside events and programs
Requirements
  • 2 years or more experience in pastry production.
  • Knowledge of lamination, chocolate work, production of confectionaries, and building cakes and entremets preferred.
  • Must maintain a high level of cleanliness and be aware of all food safety standards (must have Illinois' food handler's certificate).
  • Ability to lift 50 pounds
  • Must have a flexible schedule including the ability to work on holidays.
  • A great attitude, an eagerness to learn, and passion for pastry.
