Job description

At Dollywood Parks & Resorts, we create memories worth repeating! We are seeking a Baker I who will embody the heart and soul of our mission of creating memories worth repeating while bringing families closer together while caring deeply about our brand.

We want to work alongside someone who acts as an extension of our mission, values, and culture. The ideal Baker I will be equal parts curious learner, innovator, administrator, detail driver, mentor, and motivator.

This position is responsible for food preparation, storage, and product rotation which comply with expected Dollywood quality, quantity, presentation, and state and local health department requirements.

Additionally, the ideal candidate will be able to display and live out Lead with Love qualities, strongly rooted in the Dollywood Company culture, by being patient, kind, trusting, unselfish, truthful, forgiving, dedicated and accountable.

Summary of Essential Functions and Responsibilities

  • Produces and decorates high quality bakery items including: homemade breads, muffins, cookies, cakes, pies, danish, etc.
  • Acts as quality assurance inspector, ensuring food is of high quality
  • Enforces bakery production schedules to ensure the proper amount of product is on display at all times
  • Provides guests with professional showmanship via observation window overlooking the production area of the bakery
  • Enforces preparation/food handling standards which ensure proper portion control
  • Ensures all products are presented to guest in a visually appealing and appetizing manner
  • Ensures procedures are in place in regards to labeling, dating, and/or rotating standards including the usage of day dots, FIFO (First In First Out), etc.
  • Guides Hosts in learning proper food preparation, portion control, and storage of all bakery products
  • Follows proper procedures for inventory, portion control, ordering, scheduling, and maintaining work area cleanliness
  • Maintains proper sanitation, scrub, sweeping, dishwashing, mopping, trash removal, etc.
  • Hosts may be asked to work past their scheduled shift; on slower days Hosts may be sent home after 3 hours or called off for the day
  • Be available and willing to work at different locations across the Dollywood Properties
  • Able to train and monitor Baker II and Baker III
  • Follows all Authorized Operator Training Procedures
  • Complies with state and local health department regulations as well as Culinary Services departmental policies
  • Be an active participant in safety issues relating to personal safety and the safety of fellow hosts and guests
  • Knows, understands, & enforces the use of the “Start Fresh” program when necessary
  • Knowledgeable of proper cooking temperatures and hold times and is responsible for taking and recording food temperatures hourly
  • Responsible for completing credit card transactions in compliance with the Payment Card Industry Data Security Standards
  • Learns and understands the Culinary Services Check 5
  • Hosts are expected to be able to answer guest questions concerning Park layout and menu item availability

Education and Experience Required

  • Must be at least 18 years of age
  • High school diploma or equivalent
  • Culinary degree in Baking/Cake Decorating preferred
  • Two years of bakery operation experience required
  • Able to successfully complete ServSafe Manager Certification within 30 days of start date
  • Must take Start Fresh training, as well as implement all safety aspects of Start Fresh training
  • Must successfully complete a post-employment offer background check and drug screen

Physical Requirements | Environmental Conditions

  • Lifting and Carrying: Position may require occasional to frequent lifting of up to 50 lbs utilizing company’s safety guidelines for safe lifting
  • Mobility: Position may require intermittent to prolonged sitting, standing and/or walking for duration of shift, up to 13 hours
  • Repetitive Movements: This position may require performing repetitive movements and tasks throughout the shift, including repeated use of hands, arms or other body parts as part of typical job functions
  • Environmental Conditions: This position requires the ability to perform work tasks in varying weather conditions to include extreme cold and heat
  • Cognitive and Sensory Requirements: This position requires strong cognitive skills, including the ability to think critically, solve problems, process and retain information, have attention to detail and communicate effectively using approved communication methods
