Job description

POSITION SUMMARY

Prepares, seasons, and cooks soups, meats, vegetables, desserts, and other foodstuffs for customer at Prairie's Edge Casino Resort by performing the following functions.

Hiring for Part Time-Weekends shifts will include weekends and holidays.

Shift differentials of $1.00/hour extra for 4:00 p.m.- midnight and $2.00/hour extra for midnight - 8:00 a.m. We also offer a generous benefit package with Health, Dental, Vision, Life insurance, Employee Discounts, Paid Time Off, Vacation, and 401k - with a company match.

ESSENTIAL FUNCTIONS

Prepare, cook, and clean food as needed.

Able to read, measure and prepare food from a recipe.

Measures and mixes ingredients according to recipe to prepare soups, salads, gravies, desserts, sauces, and casseroles.

Bakes, roasts, broils, fries, sautes, and steams meats, fish, vegetables, and other foods in addition to having a working knowledge of convection ovens, braisers, deep fryers, broasters, alto shams, steamers and various kitchen processing equipment.

Carves meats, portions food on serving plates, adds gravies and sauces, and garnishes servings to fill orders. Start food in process making sure not to prepare more than estimated amount.

Butchers chickens, fish, and shellfish. Cuts, trims, and bones meat prior to cooking.

Washes, peels, cuts, and shreds vegetables and fruits to prepare them for use.

Note any out-of-stock items or possible shortages. Monitor to correct any food cost problems by controlling food waste.

Adjusts thermostat controls to regulate temperature of ovens, broilers, grills, roasters, fryers, and steam kettles.

Able to operate and maintain all kitchen equipment properly on a daily basis.

Ability to create menus when needed and communicate such items to staff.

Must keep the line stocked of all items including but not limited to all food items needed and all the proper cookingutensils.

Must keep the cooking line and all other areas clean throughout shift.

Must be aware of food quality standards and use proper plating procedures according to menu plans.

Must have knowledge of and be able to perform opening procedures; including but not limited to proper set-up, proper heating/reheating, restocking, and knowledge of proper cooking methods.

Must have knowledge of and be able to perform closing procedures; including but not limited to proper cleaning procedures, restocking, proper cooling and shutting off all appropriate kitchen equipment.

Must possess and maintain proper food handler (ServSafe) certification.

Ability to cook, cool, and hold food properly according to federal food code guidelines.
