Job Details:
The front half enters the cone line conveyor system directly in front of the team member. The team member grasps the right wing and positions the piece. The knife is inserted into the right shoulder joint, making a cut along the pully bone and down along the right side of the scapula bone. The right wing is pulled down to sperate the breast meat from the shell. The left wing is grasped, rotating the front half counterclockwise from this position. The knife is inserted into the left shoulder joint and cut along the pully bone, down the left side of the scapula.
