DESCRIPTION
The Kitchen Director is responsible for:
• Always delivering crave-able food, in a timely manner, that meets or exceeds
  • Chick-fil-A Quality Requirements

• Coaching the behaviors of all Team Members who work in the Kitchen. Those behaviors include:
  • Living out our Core Values: To make a difference in the lives of team members, our guest and the community.
  • Always delivering crave-able food
  • Hustling, working with a sense of urgency, going all out to create surprisingly fast Speed of Service
  • Vigilant attention to the organization and appearance of the BOH area that ensures a refreshingly clean environment
  • Execution of systems that ensures a Food Safety environment

• Monitoring behaviors in BOH that impact Food Cost. Those behaviors include:
  • Waste tracking for chicken, fries, prep and breakfast
  • Ensuring chicken tracking is taking place
  • Seeking credit from supplier for underweight cases of chicken
  • Enforcing a culture of "cooking less, more often"
  • Ensuring proper portioning and weights of products are met according to Chick-fil-A recipe standards
  • Evaluating Performance of Labor Cost along the Executive Director(s) of Operations
  • Reviewing the schedule before it gets posted
  • Looking at Time Punch Variance Report (Actual vs. Scheduled Hours)
  • Review Labor Report for opportunity to improve productivity

• Inventory management
  • Complete Weekly Truck Orders
  • End-of-Month Counts and input
  • Maintaining accurate transfer logs
  • Effective & efficient ordering

• Maintaining a LEAN production environment (Kitchen I pads, Lean kitchen thawing)

• Collaborate with other Directors to ensure unity and clarity
• Holding each other (Directors) accountable for their roles and responsibilities

In our kitchens, we focus on fresh and simple ingredients. And we always have.
