Your Role in the Kitchen
As a Prep Cook at Draft, you play a foundational role in delivering consistent, high-quality dishes. You are responsible for preparing ingredients, organizing stations, and supporting Line Cooks and Sous Chefs to ensure seamless service. Your precision, organization, and adherence to recipes directly impact the guest dining experience.
What You'll Be Cooking Up
Food Preparation & Execution
  • Follow the daily prep list as assigned by the Chef de Cuisine
  • Prepare ingredients for entrees, sushi components, sauces, and other menu items including washing and chopping produce, slicing meats, and measuring seasonings
  • Accurately build and portion recipes according to established standards
  • Prepare simple dressings, vinaigrettes, and foundational sauces as directed
  • Assist with assembling basic dishes such as salads and composed plates
  • Maintain familiarity with Draft's menu offerings and preparation standards
Kitchen Organization & Station Setup
  • Set up and sanitize kitchen workstations and equipment before and after shifts
  • Label, date, and stock ingredients properly to ensure organization and food safety compliance
  • Place prepared ingredients in assigned stations according to recipes and service flow
  • Ensure all food items are stored properly and rotated using FIFO practices
Sanitation, Safety & Standards
  • Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, and removing trash
  • Comply with all food safety, sanitation, and health department guidelines
  • Demonstrate safe knife handling and proper food preparation techniques
  • Support overall kitchen efficiency by performing additional duties as assigned

Requirements
Pay rate is determined based on relevant experience and qualifications.
Physical Requirements:
  • Must be at least 18 years of age.
  • Must be able to constantly stand and exert well-paced mobility for a period up to four hours in length.
  • Must be able to bend, kneel, stoop, reach, and squat on a frequent basis to receive and store stock, supplies and equipment as well as to work the line during service periods.
  • Must be able to use their hands to handle, control, feel objects, tools or other kitchen machinery.
  • Must be able to lift up to 40 lbs.

Skills/Qualifications:
  • Required: Food Handler's Card, or ability to obtain prior to start date.
  • Knowledge of health and safety rules in a kitchen.
  • Knowledge of basic cooking techniques.
  • Manual dexterity is able to operate cutting tools and kitchen utensils.
  • A team player with good communication skills.
  • Patient with an ability to stay positive under pressure.
  • Maintain a positive and professional approach to coworkers.
  • Perform other related duties assigned by the management staff.
  • High school diploma or equivalent is desirable.
  • Training from a culinary school will be an asset.

Testing/Work Authorization:
  • Must be at least 18 years of age or older.
  • Valid U.S. work authorization required.
  • Pre-Employment background check Required.

Expected Hours of Work:
Flexible availability is required, including nights, holidays, and peak seasons. Team members must maintain open availability for at least two of the three weekend days: Friday, Saturday, and Sunday.
