Job description

Description: Along with the General Manager and the Kitchen Manager, the Assistant Kitchen Manager assists in achieving our mission. He or she must create, coordinate and lead a Back of the House (BOH) team that is responsible for daily operations in the kitchen, prep and dish areas of PURE Taqueria according to PURE standards, programs and systems. The Assistant Kitchen Manager is also responsible for creating, and instituting plans that will achieve stated objectives in food quality, costs, employee retention, cleanliness and sanitation. The PURE Taqueria Assistant Kitchen Manager must understand and have excellent working knowledge of all daily accounting functions, POS and the supporting computer systems. The Assistant Kitchen Manager will also have regularly scheduled shifts as an Expo/BOH MOD, and fulfill all the duties of a Kitchen Manager, if necessary. The PURE Assistant Kitchen Manager must have excellent knife skills, and advanced ability with Escoffier techniques and butchering meat and fish. Requirements: • Must have a proven record of leadership, team building, effective communication and sound judgment • At least 2 years experience as a chef, sous chef or kitchen manager, or equivalent, with an emphasis on Escoffier techniques • Must have excellent communication skills in either English or Spanish • Must have current ServSafe certification • Possess excellent basic math skills and have the ability to operate a POS system, Accounting Software and Microsoft Office • Be able to work in a standing position for 10-12 hours per day • Be able to reach, bend, stoop and frequently lift up to 50 pounds • Must be able to work 50 to 60 hours per week
