Position Overview:
The Kitchen Supervisor will in addition to performing the duties of Lead Cook, assist the Director of Dining Services with the oversight of dining services staff, and monitor and maintaining department inventory. The Kitchen Supervisor will also assist with meeting resident dietary needs, maintaining dietary records, and ensuring a clean and sanitary environment in compliance with state, county, and federal regulations. May also serve as backup for Director of Dining Services when absent.
Essential Job Functions:
Lead Cook
  • Perform the duties of Lead Cook.

Oversite of Dining Services Staff
  • Oversee and develop dining team members; including the completion of onboarding, annual competencies and staff engagement and retention.
  • Ensure that staff are adequately oriented and trained in culinary processes and procedures

Inventory Control
  • Assist with inventory, monitor and order supplies in a timely fashion operating within the allotted budget.
  • Actively work with food vendors on procurement and production of foods as requested.
  • Assist with the oversight of food portion control and avoid wasting food or supplies.
  • Assist with oversight of supplies, ensure that adequate quantities are maintained to perform daily tasks.

Sanitation and Food Safety
  • Monitor and follow up on cleanliness and sanitation.
  • Ensure that food preparation area is clean and sanitized; follow sanitation practices as described in the Hazard Analysis Critical Control Point (HACCP).
  • Check and record temperatures of food to ensure that it is served at correct temperatures.
  • Perform audits on all cleaning logs on a regular basis.

Food and Meal Preparation
  • Assist in assessing and implementing residents' special dietary requirements and requests.
  • Assist with other requests such as ordering and preparing food for special events
  • Oversee the preparation of food in accordance with recipes and diet cards.
  • Assign food preparation duties to dining staff and ensure food is ready and served or delivered at the proper time.

Other
  • May be required to perform any and all other Dining Services duties as needed.

Qualifications and Experience:
  • Must be eighteen (18) years of age
  • Prefer one or more years of culinary training or equivalent experience
  • Prefer one or more years of experience managing a food service operation
  • Prefer prior experience working in healthcare setting or a retirement community
  • Prefer SERV Safe certificate or willing to achieve a certificate
  • Must be able to work weekends and some holidays

Physical Requirements:
Medium Work - Exerting 20 to 50 pounds of force occasionally, and/or 10 to 25 pounds of force frequently and/or greater than negligible up to 10 pounds of force constantly.
