Position Details:
Flik Athletics & the University of Nebraska, Lincoln is seeking a Dietetics/Nutrition/Hospitality undergraduate or graduate student who has interest and/or experience in foodservice, food safety, culinary nutrition, menu analysis, sport nutrition, allergen management, special diets and wellness program implementation. In this role, you will work under the Flik Dietician to lead and assess food safety and wellness initiatives through collaboration with culinary teams, operational leaders and client stakeholders to uphold best practices, strengthen compliance and deliver measurable program outcomes.
Interns will be expected to actively participate in managerial responsibilities and problem solving throughout the internship.
Job Description:
  • Food Safety & Quality Assurance: Observe site-level execution of food safety programs, learn to conduct food safety audits, develop corrective action plans
  • Teamworks Nutrition & Performance Kitchen: Assist the Dietician with importing weekly menus into Teamworks Kitchen Menu Builder and publishing menus for student-athletes and staff to utilize in Meal Planning and Goal Setting. Extensive training will be provided on importing recipes from Webtrition and working with chefs to update UNL, Lincoln's database.
  • Allergen Labeling & Risk Management: Support site-level execution of our allergen control and labeling protocols; train culinary and service teams on allergen management; ensure accurate communication of allergen and ingredient information through digital and physical labeling platforms and learn menu management software
  • Wellness Programming: Support the implementation of performance-minded and wellness-forward menu offerings, collaborate with the culinary, front of house, wellness and marketing teams to promote educational wellness campaigns, healthy eating initiatives, and nutrient transparency, and serve as the expert in nutrition and wellness at tabling events, employee events and client presentations as needed
  • Training & Team Support: Develop and deliver training sessions on food safety, allergens, sport nutrition and wellness for culinary and service teams and mentor unit-level allergen champions.
  • Platinum Service is our Customer Service: Create friendly, solution-focused experiences for guests and team members, ensuring every comment receives a response within 24 hours and important feedback is shared with management to drive continuous improvement.

This is a paid intern position; however, it is not eligible for paid time off (PTO) or benefits such as medical, dental, vision, etc.
